Where to find very specific scheduling poll features?

Help us! My area has a need for a very specific polling/scheduling function. We need two things. Allow participants to pick a day of the week, and allow only some number of responses for any one day.
To describe in more detail: we need a calendar display that lets participants pick their preferred day (NOT time, just day), and also "turns off" a day once two participants have chosen the same day. Subsequent participants would then see that the two slots on Monday are taken, but there are still both slots open on Tuesday and Wednesday and one on Thursday. So far, we haven't been able to figure this out with our existing tools, but there must be a way. It's not that complicated! We have: Microsoft for business, Springshare for libraries, Google, and Qualtrics survey software. We could consider an inexpensive paid subscription to other services if necessary.

Response by poster: Thank you, that worked! We're also exploring using calendar features to create events with limited spots for sign ups, so that might work, too.
