Can you recommend a one-time course that would be a fun date activity? It can be any art, craft, design, food, or other fun interactive class. What maker/art/craft/etc. What have you done in the past that you loved?
Dumpling making class.
I have zero interest in ever making the fussy little yum pockets ever again in my life, but for me it was a really fun one time thing.

Cooking classes, or knife skill classes are really fun. The cooking classes can be very long, so i wouldn't recommend it as a first date.

Glassblowing is fun and so was a blacksmithing half day workshop I took a few years ago. I still have the stuff I made from both classes - they're cool, pleasing objects with extra memories and meaning.

I don’t know yet if I love it, but my husband and I are taking an intro to powertools class and I know they also have a night to make a cornhole set together

If you can find a one-off woodturning lesson, that's what I'd recommend. Enormous fun, and most people can produce something decent as their first piece.

I did a drop in life drawing class at a local art school. Bonus was we went to dinner after.

Candle making or glycerine soap making (note: not lye soap, that's hard) would be easy day activities. Glass fusing is easy fun if you can find somewhere that offers it. Maybe a collage making class. And they have painting/drinking classes in a lot of places.

I just went to a fun silversmith class where we chose a cabochon and made our own silver ring, as in this video.

Seconding the jewelry making. We found a local artist here in Portland who does these 2-3 hour classes, hammering and blowtorching and everything, and then you have a keepsake at the end.
Maybe pottery making? Those hokey paint-and-drink date night things can be fun even if in a semi ironic way. (I’m sure NYC has its own hipster brand of those.)
