I need to use a huge bunch of scallions in a vegan way

I'm stumped as to how I can use these up in some interesting ways. Do you have a good recipe? I have vague thoughts about potato hashbrowns, or Korean-style pancakes. Maybe a kind of French onion soup can be done with these (with vegan faux-beef stock)? My boyfriend is vegan so I'd like to make something he can eat as well. (Also, they may be spring onions instead of scallions, I don't really know or care the difference, I would accept recipes that use green onions as well.)

Any kind of soup, or beans.

See if you can find the recipe for "Saint Basil Soup" that's mainly mushrooms and onions -- they would be awesome in there.

scrambled tofu

baked tofu (sprinkle on top)

baked tofu sandwich

put in chickpea cutlets

bread-based sage stuffing

Scallion pancakes!

I just made them from Mark Bittman's recipe but they're all pretty much the same. Make a sweet/salty sauce from soy sauce + sweet thing or use the sweet chili sauce you can get pretty much anywhere.

they’re great on the grill as accompaniment to your meal. toss them in olive oil, salt, and pepper and cook them on the cool side until the bulbs are soft and the tops are crisped. cebollitas in Spanish, yum.

You can freeze green onions, you just should then use them in cooked applications. It’s like freezing any other small thing, wash them and dry thoroughly, chop them up, and stick them in a freezing container. Come back every, oh, half hour to an hour and give it a good shake shake shake so they don’t all freeze together in a clump until fully frozen. Then you’ll have chopped scallions on demand for: miso soup, marinades, topping roasted vegetables, inside grilled cheeses and quesadillas, sprinkling onto curries, tucking into falafel, etc.

I emphatically encourage you to make scallion pancakes as well.

My wife likes them in cauliflower rice. Cauliflower and scallions in a skillet with olive oil, salt, and pepper.

Nthin Scallion pancakes. There are a few varieties, as well - the Thai place near me calls this stuff scallion pancakes but there's glutinous flour involved and they're cubes, so you can try a few.

Additionally, you can make a vegan kuku sabzi (aka 'Persian frittata') but I can't personally vouch for any of the recipes out there. Sub in the green onion for the onion or some of the greens or both, but make sure there's some neutral greens in there too.

Trader Joe's sells a frozen potato & scallion pancake to fry up; they are delicious. Maybe 2/3 grated potato, 1/3 long slices of scallion, formed into a patty, fried in vegetable oil.

If you're a sandwich person, they're great on sandwiches. Do a half slice lengthwise then pull off your little onion sheets. They layer and stay put on a sandwich real well so every bite gets full flavor and coverage.

I would make a spring onion pesto and then freeze it in an ice cube tray (transfer to ziplock once frozen). Then pop one into... anything! Stir fry, saute of any veggie, pasta sauce, curry, soup, taco filling...

To make Purée with garlic and olive or other oil of your choice, all raw.

You can also dehydrate them. Dried green onions are more mild in flavor and can be used as a garnish or just eaten plain.

Spatzle and any similar dish with a cresmy vegan sauce like cream white wine pasta.

I'm not a big fan of alliums so I don't have any personally tested recipes, but a quick googling for 'spring onion soup'* brought up loads of recipes, this being one. "Huge" means different things to different people, but that recipe asks for a pound.

There are also several recipes for 'green/spring onion tart' which usually also ask for a decent quantity, but there are fewer vegan options. If you're adept at cooking you could probably adapt a vegan tart recipe easily enough to swap in your scallions as the main ingredient.

*The dividing line between spring onions, green onions and scallions in recipes is, in my experience, difficult to identify and mostly arbitrary/colloquial. At the least most recipes seem to handle interchanging easily enough.

At first I didn't reply because someone had already suggested the pancakes, but now I realize I have a craving for just plain steamed scallions. I'm going to eat them with a dressing of sorts, I just haven't decided which yet. Maybe pesto? Or something with chopped peanuts and sesame oil and lemon? Or a vinaigrette? So many choices.

The thin crispy flaky style of scallion pancakes is great, but I slightly prefer the leavened version. This variant of scallion pancakes is a yeasted dough rolled and flattened with a HUGE pile of scallions inside, then dredged in sesame seeds and pan-fried until it's crispy on the outside and tender in the middle. Here's a recipe.

My tabbouleh uses a whole bunch of scallions, a whole bunch of parsley, a couple of nice tomatoes, some mint, a bit or a lot of soaked bulgur, olive oil, lemon, salt and pepper.

If you have too many, save some of the white ends and stick them in one of your plant pots outside or by a window to grow some fresh new green onions.
