I like to make a batch of pancakes and freeze them to have on hand for my son’s breakfast. I’m looking for some variations to keep things interesting.

My go-to recipe is this Good Old-Fashioned Pancakes recipe, either plain or with mix-ins— so far, mashed bananas, blueberries, or chocolate chips.
I’ve also made these Sweet Potato Pancakes and sometimes these Diner-Style Buttermilk Pancakes if I remember to pick up seltzer/club soda.

What else can I do with pancakes that will hold up in the freezer for a few weeks and reheat well? (Son has no dietary restrictions.)

I like Martha Stewart's Buttermilk pancakes. No seltzer needed, and they're still quite fluffy. I've successfully frozen them, too.

For added flavor, I always add some Baking Spice for cinnamon and cardamom flavor. You could mix it up with lemon extract and poppy seeds or orange extract or almond.

For toppings, try peanut butter spread on the pancakes. It's really good, especially if it melts a bit. I'm sure you could go further and add jam as well... Or you could try peanut butter chips inside the pancakes, then top with jam.

Going along the chips line, you could do white chocolate chips, and maybe some chopped walnuts?

I make them with cooked chopped bacon in the batter.

Apple Pancakes. I make them all the time and freeze the leftovers and defrost them in the toaster with no problems, the apple can brown a little but still tastes good.

Also, raspberry pancakes with syrup are a delight.

I finally learned the secret to my favorite pancakes ever.... malted milk powder from King Arthur. I'm sure other brands like Carnation would be fine as well; this is usually sold near ice cream toppings in grocery stores. It's a little sweet but also complex.

For another variation, I really like this oven-baked pancake. It's also good with fruit other than blueberries -- I like raspberries. It freezes well.

I love Buckwheat pancakes. The buckwheat is a little nutty turns the pancakes a slightly dark blueish color.

Try adding canned corn to your pancakes. It's good.

Not a variation on a pancake but an idea for plain pancakes. Add fillings and heat in sandwich maker. Possible fillings could be jam, pie filling (easy to make homemade), nutella, PB, flavored cream cheese.

I've made pancakes every Sunday for the last year. My favorite base for adding fruit or whatever is Melissa Clark's Whole-Grain Pancakes. If you can find/forage them, serviceberries are the most delicious mix-in.

When I have the leftovers, we also love these quinoa pancakes and these oatmeal pancakes with cardamom and apricots.

This may not be what you're looking for, but we also live a savory pancake at our house, and we can put away a remarkable number of chard pancakes.

You didn't say how old your son is, so assuming he is still a child.... Make fun shapes. Teddy bear, mickey mouse, letters of his name, Alligator, dinosaur, etc. Maybe just a few so he gets one fun shape and 2 circles.

My favorite pancakes are a basic batter but flavored with cinnamon and orange extract (or zest, but the extract is a pantry staple at my house and I may or may not have fresh oranges). That combo is also good with added chocolate chips.

There are the 2 ingredient banana pancakes. I personally add about a tablespoon of flour, but it's not necessary. I've added peanut butter and/or chocolate chips. Berries are good in them too.
