Rosehip cocktail ideas

Calling all mixologists and cocktail creators: I have a few jars of rosehip jelly that just...didn't set. So it is equal parts rosehips (simmered in water and strained), and sugar. I have plans to fix some of it, pour some of it on top of a pound cake, etc etc, but I was also imagining some killer cocktails using rosehip syrup. What, dear friends, would YOU make?

Two shots rosehips, one shot lime juice, two shots bourbon, shaken.

Then name it after yourself.

Very good (unflavored) vodka, soda, syrup to taste, over ice. Tall.

You could consider flavor combos, but be careful. Preserving the rose nuance is the goal. Rose+mint, rose+(very little) basil, rose with small orange twist...

Any liquor with it's own strong flavor will overwhelm the rose.

Actually make that bottled lemon juice.

Limes are a pain.

Ok, I might agree with the bourbon, but no lemon juice. Bourbon and orange work, as do bourbon and cherry.

This would make an excellent addition to a basic gin and tonic! I used to have a rose tonic mix that I loved with gin.

Rose flavours pair nicely with pomegranate. So: rosehip jelly, a little pomegranate syrup or juice, some vodka, sparkling water.

Ok, I might agree with the bourbon, but no lemon juice

But that with sugar is a whiskey sour!

So this would be a Rosehip Sour or some other name someone else should come up with.

I bet it would be especially nice with Hendrick’s gin, which is more floral/herbal than most. And then I feel like an egg white cocktail is the way to go, like in a Gin Fizz. That should be lovely.

I'd try just mixing one part syrup to 4 parts mineral water, then maybe experiment with adding cardamom to the syrup to see how that tasted.

Here's another one -- rosehips are touted as high in vitamin C. You could make a hot toddy replacing the honey with the rosehip syrup.

I'd add it to pink zinfandel, because, pretty. Maybe some sparkly water in there.

Rose works extremely well with chocolate. I’d do equal parts rose syrup and white chocolate syrup (ghirardelli makes a great one for coffee that would work) shaken with vodka and served up.

You could also just do gin and rose syrup, sugared rim on the glass. Also dry sparkling wine and rose syrup, with raspberries or halved strawberries in the glass.

Do your rose hips taste of roses? Those I've tried have just been sour. In that case try substituting for something mildly sour.
