What do I do with all this mock duck?

Thanks to my friend's very enthusiastic mom, I have come into the possession of many frozen packages of mock duck (soy based, fwiw) and also several frozen packages of mock char siu. Help!

If I had one package of mock duck, would probably just make some kind of stir fry/fried rice/noodle thing. But I have like ... six packages of mock duck, and am desperately in need of variety in my dinners.

Seeking ideas for preparation methods I haven't thought of. (Deep frying it? Chopping it up and turning it into something else? Mock duck jerky?) I have a pretty well-stocked pantry/fridge, and access to a number of different grocery stores.

No meat, but am OK with eggs, dairy, and seafood, and don't have any other dietary restrictions or allergies. I don't have quite as much mock char siu, but would accept suggestions for that as well.

I just had Thai Massaman (potato, peanut curry) with Mock Dock. Of course, any recipe for Seitan is the same as mock duck too, if that helps your allrecipes.com searches!

You can shred it and simmer it in BBQ sauce for pulled duck sandwiches.

You can cook it like an al pastor recipe for tacos.

Mock char sui makes great char sui bao.

OK, so maybe I don't use recipes so much, but here's an outline of a favorite of mine. I suppose I should mention that I love how the texture calls back to the texture of minced pork.

Ingredients

1 T Oil
1-3 cloves garlic minced (you know what kind of person you are, are you a one or a three?)
2 C mock duck diced small.
2 C dried shitake mushrooms rehydrated 12 hours, diced small
3 T vegetarian "oyster sauce"
1 C frozen peas
3 scallions cut into 1/4 inch segments

1. get that oil hot in a large skillet or wok and fry that garlic up.
2. stir fry the mock duck and mushrooms for a minute or two
3. add sauce and allow it to caramelize a bit on everything.
4. add peas and scallions and cook until the peas are warm.
5. serve!

The char siu would be great either thrown into fried rice to use up all your veggie bits and pieces, or in a banh mi sandwich.

where does one get mock char siu?! I need it!

I need it to make char siu bai that a porkless person can eat.

Fingersandtoes, you can use regular mock duck in a char sui bao recipe, but I like to caramelize on a char sui sauce. Dice the mock duck like for bao. Heat up a fair amount of oil and start frying it up on high, add in three or four tablespoons of sauce (from a jar or a recipe, either is fine as long as it’s got enough sugar) and let the fat and sugar caramelize into a nice sticky mess. If you add diced shiitake mushrooms, it with give you a nice variety of texture that seems even more pork like.

Cool this product and stuff it in bao.

Ooh, I would definitely use this to make mock Peking duck. This recipe looks great. (Note that it's a UK recipe so the "grill" is the broiler.)

I bet it would be nice as a soup topping, cut into bites and lightly browned. Make a broth to your taste, maybe with lots of dried mushrooms, maybe some cabbage and carrots and garlic. Perhaps bulk it up with some noodles or rice cake, scallions, some ginger.

Since you have so much you could get experimental with it. Maybe coat in starch and panko and fry slices and eat on a sesame seed bun with BBQ sauce and burger toppings!

We've been going through packages upon packages of mock duck just making duck wraps (similar to the Peking Duck recipe linked above but simpler and imo tastier). You just fry some mock duck, cut up some cucumber and spring onion, spread some mayonnaise and hoisin sauce on a large tortilla and fill it with the duck, cucumber and spring onion.
