Gaaaalic bread

Can I eat this? Frozen garlic bread left unfrozen.

I brought a frozen loaf of garlic bread home from the grocery store on Sunday. It says "Keep frozen until ready to use" but there was no room in my freezer so I stuck it in the fridge, planning to use it on Monday. I did not use it on Monday but would like to have it tomorrow evening for dinner.

The bread in question is a pre-sliced loaf, each slice being pre-spread with a mixture of butter, margarine, garlic and parsley. It is sealed in a plastic bag within the box. It has been refrigerated since I brought it home on Sunday. If I bake it up and eat it tomorrow, am I flirting with food poisoning or is it likely to be fine?

Totally fine. I would keep all of those ingredients potentially on my counter and not even the fridge for the length of time. (I try to leave butter out if I'll use it over the next two days, I have probably left it out a lot longer). Bread has been in my fridge for weeks and is fine!

They say keep frozen because yeah, it'll just be soggy.

Your only risking a difference in texture, but personally I always find frozen garlic bread too crisp for my liking so you have have done yourself a favor!

Eat it. Honestly if this was going to be problematic, our species never would have survived until this point. People have been eating bread, butter, garlic and parsley for much longer than there has been refrigeration.

Moisture from the butter may make it soggy, so I might bake it at a lower temp for longer. No safety issue. Bread and butter in the fridge for several days - no problem. Even imperfect garlic bread is still pretty great.

I would monitor closely while cook as the instructions are for cooking the bread frozen.

No problem with this. Instead of baking it whole put individual slices on baking pan and watch carefully so they're just the right doneness.

After baking, add crispiness with a quick (monitored) stop under the broiler.
