I'd love to have a fully featured (note-taking, to-do lists, calender, contacts, etc.) internet-accessible organisational tool such as foldera or airset but run the software from my own hosted space. Does such a software exist? And could it be free?

It's not the greatest, but Horde does all that. With my web host, it's installed as one of the default web-based mail readers, but it does all that other stuff.

Horde is pretty full featured and is relatively easy on the eyes as well (for an open source project, anyways). The only problem I had with it when I was using it back in the day, is that it's a hog when it comes to resources.

However, depending on your provider/server, that probably won't be an issue--I was running it on some old Pentium I / II desktop towers I used as college-student-affordable Linux servers, so if you have shared hosting at a decent place, or newer hardware of your own, you'll be fine.

I don't know offhand of any others besides Horde, but I'm reasonably certain that it's not the only candidate. Might want to try searching Sourceforge's or Freshmeat's web software categories for stuff like "calendaring", "calendar", or maybe "groupware" (which is usually what this stuff is called in the business world).

Head to OpenSourceCMS, where you can try out some PHP based groupware software.
