Food for the Tonys - difficulty: gluten-free, vegetarian, make-ahead?

For years I've wanted to have a Tony viewing party! Well, for the first time this year, I have two friends coming for dinner and viewing! Difficulty-level: one is vegetarian and the other is gluten free. I'll be home in the morning, but then gone from 2:30-6:30, and they are coming at 7. Ideas for food that I can make ahead of time that is both vegetarian and gluten-free? With bonus points if it can be a pun or tie in with any of the Tony nominees this year. (dinner and dessert ideas welcome!)
You’re aiming for full dinner or a spread for heavy snacking? If the latter, then an antipasto platter that’s lighter on the meats and heavier on the cheeses and olives, artichoke hearts, sundried tomato spread (perhaps one of those tortas with pesto and goat cheese), selection of crackers including Glutino table crackers. Spring rolls are easy to make and always impress. California rolls. Hummus and crudite.

Crustless quiche and Thai noodle salad are my two go-to vegetarian/gf meals. With the salad, just make sure you use rice noodles and tamari instead of soy sauce.

I love rice noodles with peanut sauce. Soy sauce has some gluten, but gluten-free soy sauce can be found. You can make fritters with grated potato (white or sweet), and some combination of onion, broccoli, parsnip, carrot, squash. Add curry seasonings to make them pakora. Serve with salsa or yogurt/ cucumber dip.
Tony nominees
SpongeBob Square Cakes - square polenta cakes, topped with something savory, like sauteed mushrooms. Or gluten-free brownies, cut in squares.
Use a decorative plate, arrange fritters as a Carousel with ribbon and pretzel rods.
Frozen - custard, for dessert.
Denzels (pretzels) and hummus or other dip.
Farinella Farinata I love farinata - it comes out much better if the batter is allowed to sit for 4+ hours

Cuisines that are very easy to do stuff that's both vegetarian and gluten-free: Mexican, Indian, various South American cuisines, some Asian cuisines. I'd go for either fajitas or rice, dal, and a couple of vegetarian curries - chana masala and saag paneer are always good.
I do want to make a note about crackers: If you have gluten crackers that touch any kind of dip, the dip immediately becomes too dangerous for the person with gluten intolerance. So if you're going to get crackers, you need to either enforce an iron-clad rule about using a spoon to put dip on plates, or get only gluten-free crackers. Corn chips and crudites are much safer.

A super-simple, but super-fancy-looking, idea that I've seen in a cookbook I recently got and have been meaning to try:
"Devilled avocados", which are basically avocados pretending to be devilled eggs. All you need is a thing of hummus, some ground turmeric (optional), a little paprika, and enough ripe avocados for each guest to have half an avocado (with an odd number of guests you'll have leftovers, oh well).
Stir a little ground turmeric into the hummus to tint it yellow. Halve the avocados and carefully take out and discard the pits. Then mound hummus into the holes in each avocado half, sprinkle a little paprika on top, and serve.
You mpst likely will not need the whole thing of hummus, and may have a half an avocado extra. You can turn that extra half an avocado into a quick guacamole and serve that as a dip along with the extra hummus.
