Your best curried pumpkin/squash soup recipe?

Once upon a time, our household had a great curried pumpkin (or maybe butternut squash) soup. It was so good that we knew we'd remember where we got the recipe. You can guess what happened. Recipes we've tried since haven't had the same combination of bright curry spice and creamy pumpkin. What's your best curried squash soup recipe? We don't have any special dietary restrictions that come into play (gluten free if that matters). Bonus points if we can put it together fairly quickly.

You don't mention tofu, so it may not be this one, but it's my favorite curried butternut squash soup.

I haven't made it myself, but this recipe for Coconut Curry Butternut Squash Soup has been recommended by a friend.

This is my favorite: Thai red curry paste, coconut milk and toasted coconut flakes on top. So good.

I make butternut squash soup a lot without strictly following any recipe, but just throwing this out -- if you roast the squash before throwing it in the soup it really cranks up the deliciousness.

Butternut Squash / Apple / Curry Soup
- Peel and roughly chop 1 large butternut squash
- Peel and roughly chop 3 Granny Smith apples
- Roughly chop one large sweet onion
- Saute onion in 3 tbsp. butter or coconut oil until softened (deep soup pot or dutch oven)
- Add heaping quantities of garam masala (and some madras curry if you want a kick)
- Cook until spices are heated through
- Add 3-4 cups of chicken or vegetable broth
- Put squash and apples in
- Simmer until everything is soft
- Use a stick/hand blender to puree throughly
- Add in 1 - 1.5 cans of coconut milk (for thicker soup use coconut cream)
- Use stick blender to mix together
- Taste for seasoning - if needed, add salt or pepper or garam masala to taste
- Enjoy!

Pumpkin Coconut Curry Soup - I add sage to it and sometimes carrots if I have any.

Make a roux, butter or olive oil & flour & curry powder, sauteed until flour is cooked. rice flour is okay. Whisk in chicken broth slowly. Add cooked squash, blend w/ immersion blender. Top w/ sour cream and/or yogurt and some cilantro. In your case, I might make it without the curry powder, then try different curry powder blends in portions of soup. I have definite feeling about curry ingredients.
