Food safety question!

Is it ok to prepare bacon-wrapped jalapeno poppers ahead of time? I'll be storing them in the fridge for a few hours before cooking. Am I risking any kind of food poisoning?
Yeah, you are 100% ok health-wise (probably flavor-wise, too)

Totally safe. Grocery stores around here sell uncooked, refrigerated poppers at the meat counter regularly.

I do this once a week or so, and sometimes keep them in the fridge for a couple days. Not dead yet!
One thing though: since you said bacon-wrapped, I assume you're not also egg-washing and breading them. If you are, though, stick those babies in the freezer, not the fridge. Less for health and safety, and more for breading cohesion.
