Winter Salad Recipes.

I am looking for winter salad recipes that keep well for a few days in the fridge. Examples of the type of salad I am thinking are this Roasted Carrot and Chickpea Salad and this Asian Slaw Recipe. We eat everything with two exceptions - I hate mayonnaise and avocado will kill me. I look forward to trying your suggestions!

How do you feel about full-fat Greek yogurt?

The Silver Palate Winter Vegetable Salad is PERFECT, it tastes better after it sits in the fridge. Just substitute yogurt for sour cream and mayo.

Ottolenghi's Celeriac & Lentil Salad is great and keeps for a while.

Any sort of raw kale salad will keep well, and in fact will get better, after a couple days in the fridge. I'm partial to a lemon & olive oil dressing + za'atar and whatever beans and other veggies you have around.

All the salads on this Serious Eats Vegan Experience recipe list (scroll down just a bit) look hearty and flavorful and leftover-worthy. Here's another article with links to more make-ahead salad recipes. I've only started working through the recipes myself, but everything so far has been delicious.

Roasted butternut squash, crumbled gorgonzola, toasted pumpkin seeds, and arugula. Tossed with olive oil and lemon juice. Keeps in the fridge a several days undressed.

Azifa gets better when it's been in the fridge for a few days. Sometimes I leave out the chili and mustard and add finely chopped peppers to this recipe, with a little curry powder.

Smitten Kitchen's winter fruit salad, fennel, prosciutto, and pomegranate salad, and fennel and blood orange salad might be of interest (the site has a "Winter" category that may have other items of interest, these are just the ones I've had).

From Two Peas and Their Pod, I give you
Maple Roasted Butternut Squash & Apple Salad

I used havarti rather than feta, because I had it in my CSA share. Instead of pepitas and dried cranberries, I used Trader Joe's packaged mix of rosemary-enhanced pecans and dried cranberries. It was just the right amount. (I didn't want full-sized packages of pepitas and dried cranberries tempting me.) The dressing is really what makes this. It keeps very well in the fridge.

I brought this to a potluck three years ago. The guests still talk about it, tell others about it, and ask me to make it.

French-Style Warm Lentil Salad from the blog Orangette! So yummy, and even better the second+ day. Check out her other salads, too--they tend to be good.

I also really like this quinoa salad with apples, gouda, nuts, and other stuff. Been a while since I made it, but I think it keeps ok for the next day; and it would keep longer if you stored everything but the cheese and apple, and added those fresh on subsequent days.

Equal parts grated beetroot and grated carrot. A sprinkling of cumin, some olive oil and balsamic vinegar. Even better the next day, keeps well in the fridge for a few days. Top it off with some toasted sunflower seeds. Great as a salad. Also good as a burger topping!

I make a variations on the French-Style Warm Lentil Salad noted above. I cook the lentils with some garlic, parsley stems and a bay leaf, removing those once the lentils are cooked. But once done I use the lentils as a base for whatever I feel like that day. Arugula with lentils, spiced walnuts and feta one day or a cabbage & lentils in a sesame miso dressing another. They can be dressed in anyway you like and the lentils keep in the fridge for a few days. The lentils don't even need to be the star attraction but can be used to give oomph to a meager salad.
