Is it safe? Pineapple syrup left out all night

I left some home-made pineapple syrup out all night - is it safe to use?

I've been experimenting with cocktail making recently, and having fun making my own syrups - grenadine, mint, margarita mix etc. Last night I looked at the bottle of pineapple juice in my fridge, and decided to try making pineapple syrup with it. The bottle had been open (but refrigerated) for a few weeks. I mixed the pineapple juice with an equal amount of sugar, brought it just to a boil, then left it to cool.

When I left it to cool, I thought to myself, don't forget about that and go to bed without putting it in the fridge! So of course I forgot all about it, and went to bed without putting it in the fridge. It was sitting out in the pan for about 10-12 hours. In the morning I put it in a plastic container, mixed in a tablespoon of vodka, and shoved it in the fridge, so I could decide later if it is safe to use.

Is it safe to use? It sat out for a long time, which seems bad, but its mixed with a lot of sugar, which is a preservative? And also the tbsp of vodka, which I use to prolong the shelf life of syrups.

Best answer: I would not worry about it. It has enough acid and sugar that bad things won't grow in it overnight.

Best answer: Ha ha. The problem is that the juice was open for a few weeks!

Even if you had not made syrup, the flavor is off. I'm sure it is technically safe, tho.

Three days is about as long as you should keep an opened bottle (or carton) of pineapple juice. Beyond that, all sorts of oxidation is going to have happened.

Splash out on a new bottle and make syrup from that. You can afford it.

You could leave it out for month, and it would be safe.

It's fine. Just make sure flies haven't landed in it.

I wouldn't put too high a priority on it since the pineapple juice was so old.
