Man I love covers! Off the top of my head:

I enjoyed The Wind and The Wave's recent Covers One EP.

Tashaki Miyaki have two albums of covers, both available via their Bandcamp page.

One of my all-time favorites is Headless Heroes' cover of Just Like Honey. Check out the whole album for more (lesser known, at least to me) covers.

Taken By Trees' Sweet Child of Mine is pretty fun.

Camera Obscura did ABBA's Super Trouper, and is fantastic.

Last but not least, I love love love Arcade Fire's cover of the Magnetic Fields song Born on a Train.

A classic is Devo's cover of Satisfaction which I sincerely believe improves on the original.

And in case you aren't already familiar with them and yet have this never-before-suspected yearning for '80s punk and new wave music done basso-nova style, then there is Nouvelle Vague who is about 100x better than you'd think possible given the description.

My absolute favorite is TV on the Radio - Mr. Grieves. But since I think I first listened to that on Copy Comma Right, how about Elliott Smith - Because or The White Stripes' heartfelt Jolene? Also Josh Ritter - Chelsea Hotel #2. On MeFi Music, I really like chococat's cover of TMBG's Dead.

For jazz, Bill Evans and Oscar Peterson have great versions of the Disney song "Someday My Prince Will Come." Cannonball Adderley did a fantastic album of Fiddler on the Roof. btw, did you ever see The Temptations do a Fiddler medley? And of course John Coltrane's cover of "My Favorite Things."

For fun/novelty cross-genre covers, I second Nouvelle Vague. There's also Max Raabe and the classic Me First and the Gimme Gimmes. On YouTube, user The Synthetic Orchestra does fun covers of TV and video game stuff, and Andy Rehfeldt does creative re-arrangements.

Peter Gabriel did an album of covers about five years ago called Scratch My Back, covering a pretty wide range of artists. Some very different takes. Part of the theory was that the artists whose songs he covered would return the favour and cover one of his songs in the companion album, And I'll Scratch Yours. (That playlist misses out one of the best covers, Elbow's version of Mercy Street - I swear Guy Garvey sounds almost exactly like Peter Gabriel.)

More cover albums: Tori Amos's Strange Little Girls (and also the Zep's Thank You and Smells Like Teen Spirit; Tori likes her covers so there are HEAPS of them).

kd lang did one called Drag, for which no satisfying playlist exists on Youtube, and also Hymns of the 49th Parallel.

Also if you are a fan of the Bowie song "Heroes", there was an FPP with more covers than you can shake a stick at. Though I am not sure why you would want to shake a stick at them anyway.

I really love the Capital Children's Choir covering Untrust Us by Crystal Castles, and if you're wondering how on earth can a children's choir, of all things, cover Crystal Castles?, the answer is really surprisingly well. They also have a lovely cover of Shake It Out by Florence and the Machine.

Also a slightly improbable cover by a choir, but I quite like Scala's cover of Radiohead's Creep.

The Like a Version archives were already mentioned, but I think that Owl Eyes covering Pumped Up Kicks is pretty great, as is San Cisco doing Get Lucky.

There's also the BBC's Live Lounge covers, which are often pretty great--Taylor Swift doing Vance Joy's Riptide was a recent(ish) standout for me.

Previously: Five or six generations of "Train Kept a-Rollin'".

But wait! There's more! I've since learned that Tiny Bradshaw lifted much of the original "Train Kept a-Rollin'" from another song, Cow Cow Boogie, sung by Ella Mae Morse in 1942. It was written for the Abbott & Costello film Ride 'Em Cowboy. Ella Fitzgerald sang it for the film soundtrack, but it was cut from the theatrical release, and Morse's -- er, cover -- became a hit. More (WP).

So that's like eight generations of "truckin' down that old fair way".

Vinyl Tap had a couple of programs recently (the last 2 weekends) where they played songs and their covers back to back. The criteria for selecting the covers was whatever the host (Randy Bachman of BTO fame) liked. I can't find any links for the audio show on the CBC website but they at least have a broadcast log giving all the recording information for each song.

Little known Ukrainian band Los Colorados got their 15 minutes of international fame when their cover of Katy Perry's Hot & Cold went viral.

They've gone on to cover a slew of other songs, including Rammstein's Du Hast and Reel to Real's I Like To Move It, to varying degrees of success.

If you're yelling "NEEDS MORE ACCORDION!" (because I know you are), I invite you take a trip back to the dying days of the USSR to hear another Ukrainian band, Vopli Vidopliasova, give the squeeze-box treatment to AC/DC's Highway to Hell.
