River Trip Recipes

I was assigned to do dinner on the 5th night (the last night) of a river trip down the Middle Fork of the Salmon River in Idaho. I'm kind of tired of the usual stuff that I make and I'm looking for good recipes that are filling and delicious.

Because this is the 5th day of the trip I'd prefer it if I could cook the protein at home and then freeze and reheat on the river. Ideally the other ingredients will not be too fragile as they will be stuffed in either a dry box or a cooler for 5 days. Thanks for your suggestions.

I can't tell you how much I love meatball and sauce and garlic bread when I've been camping a while. Both freezable.
If possible freeze meatballs and sauce in baggy in the pot it will be cooked in. Makes it easier to warm up.

First off, make sure that your trip is not going to be cancelled. The snow pack is at record lows so flows are also low. But if you go, expect the first day or day and a half to be a real pain -- bouncing off rocks and dragging boats. After that the volume should pick up enough that you have a more relaxing trip.

One thing to keep in mind regarding food is that yellow jackets in camp are notoriously fierce on the Middle Salmon this time of year. Some camps are worse than others, especially on the lower end where you will be cooking. They are particularly attracted to raw meat to feed their brood, so you don't want to have to spend time in dinner prep chopping up food. The kitchen help can be swarmed with yellow jackets, although they usually don't sting unless you accidentally try to brush them off instinctively. Stick to food that is quick and simple to reduce this hassle. A head mosquito net can reduce some of the anxiety while you have your hands occupied cooking.
