Vegan cooking classes in NYC?

Do you know of good cooking classes in NYC that are suitable for vegans? Classes that focus on how to prepare full meals, not just individual dishes, would be preferred (but I'll take whatever suggestions you've got).

My friend runs raw/vegan cooking workshops that take you through the entire meal. Cheap but you'll have to go to "deep" Brooklyn. Her website is here.

Brooklyn Brainery has a fair amount of cooking classes at times. I'm not seeing anything vegan right now but I feel like they normally have something.

ICE has several vegan class offerings, including Fresh and Fast Vegan Suppers for Winter and Techniques of Vegan Cooking.

vegan"plant-based" classes, and there's a ton of them... but they ain't cheap. So if money is no object, this set of four classes is vegan, and (as a vegan who loves to cook) it looks life-alteringly amazing: Professional Culinary Technique for the Home Cook. Here's one class that seems to cover a lot of ground: An In-Depth Herb and Spice Workshop. If you're OK with going the individual dish route, this vegan sushi and beyond class looks great.This site has a bunch of other options at locations all across NYC; you can buy a gift card or they have a handy-dandy 'Give As Gift' button for each class. Maybe hearty winter vegan cooking or festive vegan dinners?
