Recipe ideas for cookery tomorrow!

I'm going to a friend's family's house tomorrow and want to bring something delicious. I have wine as a fallback, but am hoping you can help me combine my random ingredients into a delicious whole. Ingredients are in the [more inside]; what I need is something vegetarian, seasonal, that won't become too gross on my two-hour journey to their place.

What I have in the house:

Things to cook:
Most of a roasted butternut squash, frozen (2-3 ziploc bags worth)
2 onions, 2 heads garlic
Half a bunch of kale
A big bag of chopped chard
Shredded cabbage (coleslaw-style)
Fried tofu
Short-grain brown rice, red quinoa
Puy lentils and regular lentils
Frozen puff pastry
Frozen spinach
Feta and goat cheese
Sour cream (half pint, leftover from latkes tonight)

Things to cook with:
Butter, olive oil, canola oil, toasted sesame oil
Balsamic, red wine, apple cider vinegar
The usual spices
Fancy finishing salts (Hawaiian pink, smoked sea, Alea red)

I'm a fairly competent cook. Something I can not slave over all day is ideal, as I have homework to do during the day. I'm going from Berkeley to Palo Alto via public transit, so something that can survive a walk and a train journey is helpful.

Response by poster: Oh! I really should have said: I don't want to buy anything else tomorrow, as I don't like the idea of shopping on Thanksgiving.

You could make a savory tart with the puff pastry, squash, onions, and goat cheese. There are a million recipes for this, or just wing it.

Butternut squash and goat cheese gratin? A soup of pureed butternut squash and sour cream, with crisp fried salted kale on top?

you could do some sort of rice salad with the following:

- brown rice
- onions
- garlic
- cabbage
- kale
- tofu
- feta or goat cheese

cook the rice and saute the onions and garlic and cabbage. let cool.

massage the kale (literally, just squeeze it in your hands like you're trying to make its troubles go away) instead of cooking it. makes it super tender.

combine rice, onions, garlic, cabbage, kale, tofu, and cheese in a battle-ready tupperware.

make a dressing with vinegar + olive oil and spices and take it along in a separate container. maybe take along some fancy salt to finish. dress and salt just before serving.

(i made a similar salad for thanksgiving a few years ago and it held up nicely while strapped to a bike for 45 minutes.)

You can make Hunza Pie, but substitute feta and goat cheese for the cheddar and either make a short crust or use the puff pastry. If you do use the puff pastry, you should probably bake it blind first.

You could also make a nice tart with the squash sauteed in a bit of balsamic vinegar. You can make some kale chips too.

I just had Spicy Quinoa with Sweet Potatoes for the first time ever today and it was delicious! I think the squash could easily be substituted for the sweet potatoes.

Were I you....

I would make a casserole with Lentils, Kale, Chard, bits of Squash, Cheeses, plus onions and garlic.

I would LOVE to eat this tomorrow!

I would add quinoa or rice.

-brown sugar+cayenne pepper+water
-stir until sugar melts
-pour over carrots (and parsnips if you want to be fancy) cut into sticks or discs in a shallow baking pan
-bake for 15-20 minutes until it gets all bubbly
-it would require a shopping trip maybe, but only 2 items and it throws together in like 5 minutes and is delicious

Or a quinoa-squash salad with chard and lentils and goat cheese and a spicy lemon-y vinaigrette.

Spicy Squash Salad with Lentils and Goat Cheese? I know that your squash is already roasted without the spices, but I am sure you could just mix them in. It is also fine without the arugula or the seeds.
