I'm looking for songs written from the perspective of someone who is expressing admiration for another couple (in a shipping sort of way). Any suggestions?

Ob-La-Di, Ob-La-Da is about a couple. Whether it's purely admiring may be debatable though.

It's hard to find songs like this that aren't seriously bitter or wistful. ("God dammit, why the fuck are you two motherfuckers so fucking perfect together?")
But if that's okay: Untouchable Face and Camden Town Rain were the standards in this genre on my home planet.

this comes up in country music towards parents or grandparents and the like. the only one i can think of off the top of my head is if you get there before i do.

George Jones, He Stopped Loving Her Today hits this somewhat.
Shelby Lynn, Johnny Met June. That relationship inspired a lot of 'shipping so I bet there are more songs about them.
There have been a number of songs about Bonnie and Clyde - some quite admiring. The Serge Gainsborough ones are probably the best bet.
There are lots of songs that retell literary (love) stories often from the perspective of one of them (e.g., Dire Straights' Romeo and Juliet, Emmylou's My Antonia), so there must be some songs that ship them instead. I just can't think of any!
