Oaxacan cooking class for an expert cook?

What's a good cooking class to go to in Oaxaca, Mexico in December, for people who can already cook? Or other food-related Oaxacan suggestions?

My boyfriend and I and his parents are spending 10 days in Oaxaca for Christmas. His mom is an AMAZING cook, and we're not bad ourselves. We'd like to get her a cooking class (or something like that) that the 3 of us can go to for a day when we're there.
There are a million of these on the internet. Trouble is, we can't tell them apart.

Do you have any recommendations for a class (or person we could hire) to teach us traditional oaxacan cuisine? We could do a private or semi-private class. It's just important to us that the person knows more about oaxacan cuisine than his mom, so we want to do this right. It would be bad if we got there and it was SUPER boring for someone who can cook.

Also, any food-related tips for Oaxaca would be greatly appreciated, thanks!
