How do I store macarons overnight for maximum deliciousness?

I just bought two dozen macarons that aren't getting eaten until tomorrow. I've googled how to keep them overnight and the advice is all over the place. Some say you should put them in an airtight container in the fridge, others say refrigeration ruins the texture. So which is it?

I have the Ladurée cookbook and it says that refrigeration actually enhances the texture. I've found that this is true, at least for the macarons I bake at home with their recipe. Maybe split them into two groups and have a taste test?

Definitely refrigerate in an airtight container. When you pull them out don't leave them airtight though, or you risk making them soggy.

Best answer: A few months ago I bought a box from some artisanal bakery based in Marseille, and the proprietor told me to keep them in an airtight box in the fridge and let them warm on the table for 15 minutes before eating them. The guy has one prizes for his macarons, so I took his advice and did not regret it.

Whatzit has it. But also it depends on where you get your macarons from. I've had some atrocious macarons, from people who don't know what macarons should taste/feel like, and no amount of TLC would repair that kind of culinary ignorance.

Why yes, I am bitter about the quality of macarons available in Toronto. How did you guess?

Response by poster: Thanks very much, I did as advised and the macarons are fabulous!
