Pimp my electricmayhem!

Yey dumpster diving! I'm inheriting two working, giant, light boards (like the kind for tracing)-- Yey electric installation art!! I'm into organic, time-lapse, living things... Ideas?
The boards I think used to be tabletops (like the one pictured here), but are older.
I want to create something to install in a local night-time gallery walk, they only last a weekend so the materials don't have to be that durable over time.
I'm a photographer, and although I don't need to use images, I think I've seen transparencies made from digital, but perhaps not large-format? I can do HD video of something, or time-lapse... I saw once an image profile projected onto a wall covered in growing medium in a completely dark room, and the image grew into a living-wall photo (I'm sure some mefite knows what I'm talking about).... I am also inspired by things that document time passing- say organically get 'eaten away'- like the patterns of snails(?) eating something translucent- ricepaper(?) or some other gel-like media... what other plants or animals will activate with light? Could I print a photo onto ricepaper or something they'd like to devour- especially at night?
I'd also consider an interactive something- but the most time I'll get for display is probably a weekend at a time. Display can be indoors or outdoors. Bulbs are fluorescent, can be replaced with blacklight or growlight too.
