Vegetable biryani recipes

Vegetarian biryani. Do you know a superamazing recipe for it?

I checked Manjula's Kitchen, but hers looked somewhat anaemic.

This is a somewhat time-consuming but delicious and authentic biryani recipe which I've cooked for vegetarians and meat-eaters alike with good review from all. For 'curd' I always use plain yoghurt.

This is a pressure cooker recipe for chicken biryani by Lorna Sass. Her vegetarian variation (details at the end of the chicken recipe) is delightful! I usually use baby carrots instead of squash, and I always add the raisins as suggested in the main recipe.

My favourite biryani recipe consists of the following things: diced potatoes, almonds, green peas, chicken pieces, meatballs, basmati rice, raisins, and delicious spices. Replace chicken pieces and meatballs with a vegetarian product instead. Fry the potatoes and almonds and heat the raisins. Prepare the almonds by soaking them in water until the brown skin (or whatever you want to call it) can be easily peeled off. Tastes DELICIOUS!

There are a couple of rice recipes in Madhur Jafferey's World of the East Vegetarian Cooking that I add beans (usually chick peas) and vegetables (potatoes, turnips, kohlrabi, broccoli, carrots, bell pepper, etc.) to in order to make freakin' amazing biryani. One is "Spiced Rice with Cashews" and I can't remember the other one, but it's on the next page. The whole book is full of amazing recipes, and I can't recommend it highly enough.
