Where to stay in the Algarve?

Did you love somewhere in the Algarve? 2 nights to spend there and looking for suggestions.
I will be spending 3 nights in Lisbon and then making my way south as I have 2 additional nights before flying out of Faro. The nights are New Year's Eve and January 1st, so am not concerned with great swimming beaches or anything like that, obviously. I know the weather can be a bit rainy - so I'm looking for something like a great spa/boutique hotel somewhere a bit bigger like Lagos, or a wonderful out of the way family-run B&B in a smaller town. What towns did you like in the Algarve? Where can we have a great New Years Eve dinner and small celebration? Anywhere I just shouldn't miss?
Will be traveling by train from Lisbon - and definitely not renting a car. Thanks in advance!
