SIM card for iPhone in E. Europe?

Questions about a prepaid SIM for iPhone in Czech Republic, Turkey, Slovakia, and Hungary.
I'm flying to Europe this December and I'm planning on getting a prepaid SIM card to put into my iPhone in each of the four countries I visit.
A. Can I get a prepaid data plan, or just voice? What about SMS and MMS? How about international calls and texts? How does roaming between countries work over there?
B. Going off of that, which carriers should I buy from in each country, and where should I go? An airport kiosk? A store in town?
Any other advice is welcome.
