NGOs in Japan?

What organizations/NGOs are there in Japan that will help with planning a community service trip?
I am an undergraduate college student who wants to submit a proposal to Projects for Peace.
Some time ago, I read about the increasing amount of rural villages in Japan where the population was very low and was growing old, because the next generation has moved on to cities with the prospect of better employment and a higher standard of living.
I am a very family-oriented person, so before these villages "disappear," I would like to document the stories of the elders that still live in those villages before they are lost forever.
Are there any organizations or NGOs that operate in Japan that are able to give me more information on logistics or possibly even help in the planning for applying for the grant for this particular field of service?
Any info will be greatly appreciated! I'm basically starting from scratch and would very much like input.

Check out Bastish's blog. He and his wife life in a small village (it's small) in northern Nagano, just on the other side of the Niigata border. They operate a tour company called One Life which is all about experiencing rural Japan's way of life. They may be able to help you out.
