Recipe plea: Nora Ephron's recipe for Viniagrette from the book 'Heartburn'. Can't find anywhere online. Mille grazie in advance.

Mix two tablespoons Grey Poupon mustard with 2 tablespoons good red wine vinegar. Then, whisking constantly with a fork, slowly add 6 tablespoons olive oil, until the vinaigrette is thick and creamy; this makes a very strong vinaigrette that’s perfect for salad greens like arugula and watercress and endive.

Just remember "3 parts oil to 1 part vinegar." The mustard isn't strictly necessary, but it does help the vinaigrette to hold together longer. Try it with different vinegars, different herbs, even different mustards.

I just tried this (made with some cheap supermarket Dijon mustard) on some tender, fresh leaf lettuce, and it was lovely.
