Is there a way that I can find out approximately how many 1st generation iPhones are still in service?

How badly do you need to know? The various mobile ad & analytics companies may be willing to provide statistics. Flurry is one such company.

Not real badly. I'm interested in knowing the size of the market for people with slightly recessed headphone jacks.

I know that I've personally bought 4 adaptors for the recessed jacks on my 2 1st gen iPhones. Always from ebay never paying more then 4 dollars. The recessed jacks are such a pain in the ass...
