Common Cheese Recipes

What are some good recipes that prominently feature cheese, but that mainly use common pantry ingredients? I'm getting tired of grilled cheese sandwiches!

This Cheddar Chicken is super yummy. Also, Parmesan Chicken and basically any kind of risotto.

Baked Brie! You wrap Brie up in pastry and bake. Then you you scoop it up with crackers and other yumminess.
Also: Fondue!

Another good option is quesadillas - you can put all sorts of different things in there. Of course, the same could be said for Grilled Cheese.

Creamy polenta with just about any kind of cheese is DELICIOUS. Super easy if you keep corn meal on hand.

Oh and if you have softer cheeses or cream cheese, make some pretzels with cheese dip baked in the oven ...

A favorite of mine that has seemed to dropped utterly from the collective memory is Weslh Rarebit.

Simple, elegant and satisfying.

Heck, it was Gomer Pyle's favorite dish.

Small cubes of mozzarella, diced tomates, minced garlic, basil leaves, a pinch of salt and olive oil. All mixed up to use as toping on toasted bread. Easy, Quick and Delicious!!!

You can make a really delicious cheesy pasta by letting a couple of tablespoons of milk, a little butter, and a handful of gorgonzola rest in a metal bowl above the pan while you're making pasta. When the pasta is done, you throw it all together and toss.

It's a Christmas miracle.

Easy risoto: boil 1 cup of short grained rice like pasta (ie, in salted water at a rolling boil) for 12ish minutes. Meanwhile, cook several sage leaves in a few tablespoons of butter. Discard sage and keep butter warm. Toss drained rice with 1/4-1/2 cup of parmesan (better, romano) cheese & sagy butter.

I like it baked on squash, especially butternut squash. Goat cheese mixed with parmesan and parsley is a pretty good combo, but most cheeses work.

Layer cheddar and cooked macaroni and bake with a little butter and milk on top- yup. No redeeming health features but very very yummy.

Alfredo or other white sauces are, essentially, roux plus cheese and milk.
Likewise, you can expand these sauces into creme soups.

Pimiento Cheese is basically cheese, mayo, and jarred peppers (you can also use fresh). It is delicious.

Oh yeah- cheese sauce on broccoli. Start with a roux. Add warm milk. Once it's a nice consistency, drop in cheese chunks. Sharp cheddar is my favorite.

Nachos!

Basic nachos are tortilla chips covered in shredded cheese and put under the broiler for a couple of minutes to melt the cheese. But you can get as crazy as you want. Throw some chili and/or mushrooms and/or black olives under the cheese. Maybe some sour cream on top.

Alternatively, try putting some jelly or fruit preserves on your grilled cheese sandwich. Pretty yummy.

Do you normally make a plain grilled cheese? If so, perhaps you just need to spice it up a bit. My grilled cheese mod is to add a touch of garlic salt to the buttered sides and in addition to the cheese I include a slice of tomato and onion. Changing up your cheeses (I like Swiss) is fun too.

Cheesy rice, flavored any number of ways - garlic powder, onion powder, real garlic/onions, pesto. Make it pizza rice if you've got tomato products around! Or, you know, real pizza.

Are you into casseroles/hot dish? Dump some pasta/grain into a, well, casserole dish, cover with vegetables and meat of your choosing, cream of mushroom/chicken soup, and layer shredded or sliced cheese on top. Great way to use up lots of things.

Final suggestion: freeze the cheese for reuse later in baking/cooking endeavors. Results may vary depending on your cheese. It would help us if you told us what kind of cheese you have :)

Seconding welsh rarebit, and here's a recipe. Despite the fancy name, it is easy to make and uses common ingredients.

Slice fresh tomatoes, sprinkle with salt, top with mozzarella, broil until cheese is browned.
One of my favorite snacks.

Also, adding mayo to the cheese side of a grilled cheese will add a whole new side of yum to the experience, FWIW.

Cheese grits. Ploughman's lunch. The beloved tex-mex abomination that is queso. (The "chile con" is silent.) Scalloped potatoes. If you want to make my grandma happy, twice-baked potatoes. (Bake 'em, halve 'em, scoop out the insides, mix with your Cheese Of Choice and garlic or chopped onion or scallions or bacon or paprika or sour cream or whateverthehell tasty thing you have on hand, refill the forlorn little empty potato skins with all the tasty stuff, and stick 'em under the broiler until they're brown.) Cheesy mashed potatoes. If cottage cheese counts and you want to make my other grandma happy, kugel. Speaking of which, does cream cheese count? Bagels. Better yet, bagels with cream cheese, sliced tomato and black pepper. Pizza bagels. (Tomato sauce from a jar, shredded mozzarella, microwave 30 sec.) That glorious bit of ironic treyf, the bacon-egg-and-cheese sandwich on a bagel. Cheesy scrambled eggs. Migas. (Fry up some peppers and onions, add shredded corn tortillas, scramble in eggs, add cheese.) Did I mention cheese grits? I think I'm done now.

French bread, fresh goat cheese, cut figs on top. Figs are in season right now. SO good, so good you see.

Also, fresh mozzarella, fresh grape tomatoes, a little balsamic and a chiffonade of basil...perfection.

Queso fundido! This is a common bar food in Mexico. It's seldom as fancy as the Rick Bayless recipe I linked. It's typically eaten with warm corn tortillas. It's simple, hearty, and delicious.

I have to suggest that you check out foodgawker and search cheese, I did and came up with endless amounts of recipes w/ cheese of all types. I use that website quite often and love it!
