Memory and Observation Games

What are some fun observation/memory tests and games?

Looking for examples of observation and memory tests and games - anything from the break-dancing bear viral to simple, paper or card based games like Pairs. Links, anecdotes, lists of rules or even hastily scribbled diagrams are welcome. Bonus points for games/tests where the player/victim is wrong-footed or has their lack of observational powers underlined (as in the video linked above).

Fill a drawer with an assortment of items then pull it out, let everyone look for 30 seconds or so, put it back and let everyone start listing the items.

I'm going to Mars. Works best with several people-- you go through the alphabet and have to remember everything that went before: 1st person: "I'm going to Mars and I'll take apples". Second person "I'm going to Mars and I'll take apples and bears." Third person: "I'm going to Mars and I'll take apples, bears and cookies." Etc. until you have to remember all 26 items that are going to Mars.

There are a bunch of old posts on games as well, so there might be something in there. Found these by searching parlor_games.

Dammit, as soon as I saw your question, I had another variation of that video in mind. Oh, well.

I'm not sure if this counts, but Sporcle has a vast collection of "How long does it take you to name as many ____ as you can?" quizzes.

Just don't go there just before bedtime.
