What can I do with over-boiled sugar syrup?
I was trying to make sugar syrup to sweeten drinks, but I boiled the sugar-water mixture for too long. Now it's all gelatinous. Should I just toss it, or is there something I can do with it?

You've made fondant.
Warm it gently in a double boiler. Warm only, not hot. Knead it until it's soft, then save covered tightly with plastic wrap.

Cook down a small portion till it just turns from yellow to red, pour it out on a metal sheet to cool, and crack it into little bits to sprinkle atop brownies fresh out of the oven. Also a very little kosher salt.
