Chefs and cooks, I am looking for your best maklubeh, mansaf and shish barak recipes.
As a side note, the shish barak I have had in the past was Palestinian or Jordanian and it was almost certainly a soup and not a dish. Additionally, the yogurt had a savoriness that might have been chickeny. I think there were even carrots and celery in the yogurt broth. Anyone ever had it like this? Do you know how to make it? I can't get the recipe from the little old lady I know who makes it... :)
I can get jameed, but any suggestions for cooking with other yogurts are welcome.
