What is the wheat pit like today in the Chicago Board of Trade?

Is the place where the de facto price of grain is set world-wide, the Chicago Board of Trade "wheat pit," still a cacophony of live in-person bidders yelling and making hand signals while wearing platform shoes and bright jackets, or has it become electronic and silent? Or are both types of bidding possible? If it changed, when did it do so and why?

Wheat-free deliciousness?

Wheat-free cooking ideas? I've got a friend who's allergic to wheat (gluten) and he wants to host a potluck dinner tonight. I'm pretty good at Japanese and Mexican Cuisine, but I can't help feel like I'm burnt out on ideas for what tasty dish to make. I also intend to take the opportunity to cook for him more often, so please give me any of your favorite recipes that are wheat-free, especially desserts!

Also, what kinds of gluten-free flours are good for baking besides bread? Does anyone have recipes for cooking with those? Thanks!

so how much bread is in a hectare of land?

I was driving past a wheat field this weekend when from the cheap seats the question of just how much bread might be in there came up.

so how much bread is in a hectare of land? obviously fields are different in size and so are breads. there are probably a million variables that might make a serious answer all but impossible but knowing all this please indulge me for a second. I'm getting pressure here.

we could talk about acres or hectare but this particular cheap-seat crowd resides in europe and that makes me partial to metric units. just for the fun of it let's also assume we're talking about some tasty dark german Schwarzbrot.

so, hivemind. wanna take a stab? the cheap seats are inquisitive and I'd rather deal with this question than certain other ones that might come from that direction.

Indian food allergies?

Which Indian restaurant dishes never have wheat or dairy (or corn or eggs)? I have seriously annoying but not dangerous food allergies to wheat, dairy, eggs, and corn. I know cream is in a bunch of Indian dishes, but I've also had some amazing Indian food that hasn't given me any problem at all. (Trace amounts of allergens don't seem to cause a reaction for me, i.e. as long as it's not an official ingredient.)

Can you help me compile a list of the "types" of dishes that I can eat? (e.g., if the dish has X in the name or it's cooked in way Y, then it's definitely safe. If it has Z in the name, then it's cooked with cream, etc...)

Polly Wants Your Crackers

I ran out of crackers the other day and decided to try making my own. I can't say the finished product was exactly what I had in mind when the cracker craving struck, but tasty they were, and now I'm on a quest. Anyone here have a crispy, savory cracker recipe to share? I based mine on Mark Bittman's recipe, but added all sorts of stuff because I have terrible impulse control. My crackers were crisp, but closer in texture to graham crackers than to the flaky light wheat crisps I get at TJ's. Is there a way I can recreate a savory, buttery crisp at home with a standard consumer oven and a pizza stone? Well, even if that's not really possible, I'd love some cracker recipes-- cheese, wheat, matzah, soda, low-carb, chik'n-in-a-biskitesque, any and all are appreciated!

Home Brewing Help!!!

To all home brewers out there: Need help with a recipe. I know the basics when it comes to home brewing, however, I am trying to make a Cherry Wheat Ale. (Kind of like Sam Adams version.) My first batch I made turned out ok. It had a mild cherry flavor and a sweet wheat flavor. Not bad but it really didn't taste anything like a Cherry Wheat. After about a week when everything was said and done (after the 1st and 2nd fermentation) the cherry flavor that was there disappeared. It was like it was never there to begin with. All the bottles were capped and sealed. When you opened the bottle the beer was still bubbly and foamy. I am not sure what I did wrong? I used a cherry extract and I brewed 6 bags of cherry green tea for the cherry flavor. Anyone have any experience making this type of ale before? Any hints on making fruit flavored wheat ales in general? Should I have used actual cherries in the brewing? All help will be appreciated.

What can I baste my Christmas turkey in?

Beer-basting-poultry-filter: Hi Mefites, I'm cooking my Christmas turkey tomorrow and would like to baste it with some yummy beer. We made one liquor store run yesterday, and the closest we could find was "Mort Subite Kriek". I've been told in the past that wheat beers are the best bet for basting food with, but the liquor store clerk said this would be fine. My google-fu is failing me, I'm finding a ton of articles on this beer, but none that reference cooking with it.

Bonus question, if the above beer doesn't work: I've basted turkey with Sam Adam's Cherry Wheat before, and that worked out beautifully, but I have no way of getting it by tomorrow(not available locally). Can anyone recommend a good beer to baste with?

I'm in Ottawa, Canada. Thanks, and happy holidays to you all! :)

Wheat/Gluten confusion

What is the difference between wheat free and gluten free?

Why is gluten so evil now, when it wasn't a few years ago? I went to the local whole foods coop to buy a pizza crust recently and they only had gluten free crusts, which turned out to be, to this wheat-eater, almost inedible. A few years ago gluten free was a complete rarity, now it's everywhere. How and why did gluten get so evil so fast? Is the gluten allergy on a rampage?

Grind House, or The Mills of the Gods

DH and I are looking at grinders -- specifically, grinders that can handle whole wheat berries but we will, of course, use this grinder for whatever else we can (coffee, for example). Looking for your experiences with and recommendations for grinders, as well as your ideas for what to do with ground substances. There is DH is lobbying for the Country Living Grain Mill and I am wondering if there's a comparable workhorse at a lower price. He argues that it looks indestructable and would be a hand-me-down to our children. I wonder whether we need that much grinder but have also started wondering about growing our own wheat.

A KitchenAid grinder attachment is not an option, alas.

If you love your grinder, why? And how often do you use it? How is its ease of use? Cleaning? Maintenance?

What do you do with the product you grind? (And yes, I have recently been to an LDS demo on using wheat berries, which is part of what has intensified our seriousness about grinders. They offered a dozen helpful recipes but I can always use more.) I dislike cooking but can make simple things. However, I LOVE to bake and would happily make whole wheat bagels, muffins, etc. I did see this thread on healthy cereal from whole wheat.

Bonus question: DH favors oxygen absorbers but how do you handle storage and preservation issues?

How's was that spelt again?

I want to cook with spelt berries. Do you cook with spelt berries? Please tell me why, and how to do it awesomely. Do you have a secret spelt recipe? Something that not only can be made with spelt, but should be made with spelt? Whole grain spelt, not spelt flour, that is. My grocery store sells it in the bulk aisle, so folks must be doing something with it, but cookbooks just seem to say "use in lieu of whole wheat, rye or barley berries." Is there anything that's best when made with spelt? I've made some piilafs, and they were good, but they didn't seem uniquely suited to spelt. I'm an omnivore, so meaty, vegetarian and vegan recipes are equally welcome. Hit me with your speltiest, please.

What is there for a wheat gluten allergy sufferer on Passover?

What is a Matzos substitute for someone with a wheat gluten allergy? Passover is almost upon us, and I'm serving dinner to a group that includes meat eaters, vegetarians, and a meat eater with a wheat gluten allergy. I was veggie for years, so I'm going to wow them with my vegetarian-eggplant-matzos-lasgana and I'm doing baked chicken to satisfy the meat eaters.

However, I am stumped by what to serve the wheat-gluten allergy during the sedar as a substitute for matzos!

I am not super religious, and the fellow with the wheat gluten allergy isn't even Jewish, so I don't think it's worth it to order him a special kosher-for-passover rice cake. However, I am reluctant to serve a regular rice cake, because usually draw my religious line at not having breadlike risen items at Passover dinner. I *will* for an allergy, but only if the hive can't think of something better.

All ideas appreciated!

How to cut down on dairy/wheat/sugar without losing weight?

I'm interested in reducing dairy, wheat and sugar from my diet. Any tips on how to do it without losing weight? Overall, I eat a pretty healthy diet - lots of whole grains, fruits/veg, fish, and chicken. Very little red meat, almost no junk food. I also exercise 3 times a week (aerobic and weights). But for all that, I've noticed increased feelings of sluggishness (not to mention mild sinus problems) and wonder if it might be related to my weakness for dairy, sweets, and breads. (Recent doctor's visits and tests have all ruled out any obvious medical culprits.)

The catch is that I am very happy with my current healthy weight - I don't have any interest in losing even 5 lbs., but everything I've read about cutting out dairy/sugar/wheat says that one of the immediate side effects is losing weight. So how best to lose the daily milk/cheese/yogurt/bread/pastry habit (*sob*) without losing any poundage?

Help us expand a wheat farm in Montana

Is farming capable of being profitable within a generation? My grandmother has wheat fields (320 acres) in Montana that she inherited from her father. Around her fields, land is going from between 300-800 an acre. My aunts/uncle/mother stand to inherit the land, and are potentially interested in expanding.

Currently she is producing something between 30 and 40Bu per acre, and they're farming half of the land each year, planting winter wheat, and fertilizing.

Can anyone point me to any links that may help advise us on starting a real (large scale) farming operation? Shes really only making around 9k on her land each year, after expenses. Is this below average, for Montana? Will operations be more cost effective/efficient if there is more land to farm?

difference between wheat and whole wheat

Lots of time when you read labels some of them say "whole wheat" or "wheat" or "white whole wheat." I read about it in a book about stone ground and steel ground, but was still confused. Can anyone explain the difference and also the difference in nutritional value?

I want your best healthy wheat bread recipes.

I want your best healthy wheat bread recipes. I've had so much fun and success creating different breads. I've toyed with so many recipes and have had some great accomplishments. I'm a afraid that I've not tried the best. Fiber is important, low carb might be as well. Maybe we can find the better than Orowheat light recipe that works at home. I'd love there to be a nice crisp crust and a great yeast flavor. The healthier and more fiber the better.

Wheat-free baking?

I want to do some baking for a friend with an allergy to wheat gluten. She has a sweet tooth, but gets an itchy rash if she consumes even a small amount of food with wheat in it. Are there any websites with recipes for barley-, wheat- and rye-free baking? Can I simply substitute non-wheat flours like cornflour or rice flour? I'm a bit of a novice in baking, but I'm good at muffins.

What did Sandy Duncan Say in her Wheat Thins commercials? Seems like she had a tag line, but it certainly wasn't "mmmm, good cracker" or "just a pinch between your cheek and gum." I'd love to have a whole transcript of one of those commercials, but what was it she said? "The little cracker with the big taste?"
