Practical, science-based, safe, sane "low carb" book that doesn't pull any punches? (If simply "Atkins," which one?) I'm looking for a book that is gung-ho, but still spells out what can go wrong and why: I'm three days in to a self-created low carb diet. I don't seem to be allergic to wheat, but eating wheat makes me allergic to many other things, including uncooked fruits, nuts and vegetables (except citrus), general seasonal allergies, animals, etc. When I stop eating wheat, my allergies to ALL of these things go away. It's crazy. Why does this happen?

Is the place where the
de facto price of grain is set world-wide, the Chicago Board of Trade "wheat pit," still a cacophony of live in-person bidders yelling and making hand signals while wearing platform shoes and bright jackets, or has it become electronic and silent?
