Help me understand my body and weight loss.

I weigh myself every weekday at work on the same scale (an electronic medical-grade scale they use for patients at the hospital where I work) and at the same time of day. I have noticed that when I go off my diet for a few days and my weight creeps up, that that excess weight falls off again when I return to my diet much more quickly than the weight I've been carrying for awhile. What's the better weight-loss strategy, Weight Watchers or MyFitnessPal?

I'm currently on a campaign against the 20 pounds I've put on over the last 2 years (stress eating, sedentary lifestyle, post-30 metabolism drop, you name it). I hear great things about Weight Watchers, but my buddy also introduced me to the MyFitnessPal app, which is free. Weight watchers is all about "points" (carbs, fat, fiber, protein), while the app focuses exclusively on calories in, calories out. Which is better, for weight loss? [more inside]

Math not adding up. Why am I not losing a lot of weight?

Mid-twenties male, eating extremely healthily, exercising very well, very happy with his setup here. But very curious why the pounds wouldn't just be falling off now, when they were at a maintenance level when I had the reverse habits as recently as a few months ago. The horror, the horror of weight loss

Can I apply exercise calories to the next day?

When one is dieting by maintaining a small calorie deficit, is it appropriate to apply calories burned via one day's exercise to the next day's calorie total? Since I can't predict beforehand what days I'll have an opportunity to exercise, I can't plan ahead. Since I exercise rather late in the evening, binging the amount of calories after I return (directly before bed) would probably send 'em directly to my waist regardless of how much I'd just exercised.
