Help me choose a waffle/sandwich maker?

I'm looking for a good waffle/sandwich maker. But according to various Amazon reviews of various products, they all suck? Oh, come on!! Hive mind, please recommend a good waffle/sandwich maker? Or separate machines, if it comes to that. Regarding the kind of sandwich press: I don't know if I prefer panini, or the kind of sandwich where a square piece of bread gets pressed into two triangles. The end product is similar to me - pressed bread, melty insides, right? But feel free to correct my barbaric ways.

vegan waffle recipe without banana or pumpkin?

Vegan waffles with no banana, using egg substitute? I've got some Bob's Red Mill egg substitute (yes, I looked on their web site for a recipe - no luck). It's a powder. I could just use the equivalencies on the package - so much powder + so much water = 1 egg (plus I'd add some oil to make up for the lack of fatty egg yolk).

But of course, vegan egg substitute is not exactly like egg, it doesn't bind quite as well, and if you use too much there can be a slight bitter taste. I think there's actually seaweed involved. Waffles depend on the binding qualities of egg in order to be removed in one piece from the waffle iron; a misstep could lead to a very messy waffle iron full of gunk that will be difficult to remove. Not to mention a bunch of less-than-tasty waffles.

So, I'm trying to find some kind of proven recipe to use. No odd flavors, though - we've got some lovely-looking maple syrup that we'd like to use, and just plain old waffles is the perfect companion for it.

Searching for [vegan waffles] yields all kinds of recipes using pumpkin or banana as a binder -- I definitely don't want to use banana, as it will be too sweet to add much syrup then, and I really just want a plain waffle that will take various toppings well. Pumpkin just doesn't sound good to me right now, anyway. I even found waffleparty.com -- but it doesn't have a plain waffle recipe (that I can find), just a bunch of slightly-too-interesting ones. I also searched the Post-Punk Kitchen blog (the cupcake book they published is awesome), but no luck.

Searching for ["egg substitute" waffles] yields recipes that, I strongly suspect, are using "egg beaters", which are actually egg whites -- not what I want. I'm surmising this because the quantities given for the egg substitute are liquid measure quantities - like 1/4 cup or 2 Tbsp.

I've got some soy yogurt to work with, too, and I'd also be interested in a vegan pancake recipe. Thanks!

Scary waffles

How do you know when sourdough starter goes bad? This morning ms. umbú and I had some sourdough waffles using our jar of her family's 40-year old sourdough starter. They were great: airy and tangy, as they should be. If you've never had sourdough waffles or pancakes, you should. They're amazing.

The thing is, we almost didn't make them because it has been a while since we used the mason jar of starter, and sitting in the back of the fridge it has gotten pretty scary looking. There was some black liquid settling on top, for example, more dramatically than usual.

Now I know the starter is supposed to be alive and changing. However, is there a certain point where it passes a point of no return and you should no longer eat it? If so, how do you know when it has passed that point?

Waffles beyond breakfast?

I just got a waffle iron. Is there anything I can make with it besides the obvious? I like waffles, but I rarely put much effort into making breakfast and probably won't be waking up early to create waffly goodness very often. And even if I did, I have a feeling I'd get tired of waffles after a while.

Is there anything you can make with a waffle iron besides breakfasty waffles, the type you top with butter/syrup/fruit? I've heard of cake waffles and chicken and waffles, but there's got to be more out there, right? I'm especially interested in savory recipes, since breakfast waffles have pretty much got the sweet bases covered.

My iron is "traditional" rather than Belgian - I guess this makes a flatter waffle; would this make a difference in any recipes I try?

Thanks in advance!

Double the Waffle House?

Why two waffle houses on each side of the Interstate? Granted, this is not a deeply important question - but I've tried Google, Wikipedia, even the Waffle House customer line. In several southern states, in a number of cities in each - I and others have come across Waffle House locations on each side of an Interstate exit.

This seemed wasteful to me - certainly it hurt the overall profits. But a successful chain like this would not pursue such a strategy without reason, right?

Does anyone know why this is as it is? Peace, everyone, and take care.

Chicken and waffles and Canada

I live in Ottawa, Canada.
I'd like to try "chicken and waffles".
How far would I have to travel? ...If that's too far for me - what are my options - a breaded chicken breast and some Eggos?
Seriously. I have no idea.
Do you use syrup? Gravy? On everything?
Is it a 1/4 chicken?

Thanks in advance.
