What is the best time and temperature for baked tofu? Every recipe I read seems to differ wildly on those factors. I've made some that has worked, and some that hasn't. The one time I got it just right I forgot to make a note of which recipe I used. I like it crispy on the outside but still a bit soft inside. Thoughts?

How many eggs can I eat? I'm a vegetarian on the South Beach diet. I'm healthy and have never had issues with cholesterol. What I'm wondering is, how many eggs is a reasonable number to eat? I've been doing at least one a day, often two. Is that too many? Does the vegetarianism mitigate it? I really love eggs. But I do want my blood to continue to be able to fit through my veins...help me!

Experienced vegetarian cook needs to learn how to cook with meat!

After seven years of vegetarianism, I'm opening up myself to eating meat every once in a while. I can tell you how to work with lentils, press tofu, and caramelize anything until the cows come home, I don't even know how to pick out a good cut of meat, much less what to do with it! Beyond recipes, I'm looking for suggested reading, tips, etc on selecting cuts of meat, working with meat for flavoring (when and how you use different fats, etc), and other pointers.
