How to form Wheat Gluten in to a more appitizing shape?

I've started eating vegetarian, but I've really been missing meat. Recently I ate mock duck at a chinese resturant and it was delicious. I looked up it's ingredients and found out it is made of wheat gluten. I looked up how to make wheat gluten at home and came across this article. I tried using this to make wheat gluten, but the end result looks unappitizing. Without being too crude, it looks like excriment. I attempted a couple of times to shape the gluten to be more like that of a strip of chicken or similar meat, but the shape would't hold and no matter how I shaped it the gluten ended up lumpy and slightly tubular. I assume there must be a way to form wheat gluten I make into a more appealing shape. How do I go about doing this?

I have an acquaintance in the UK who sends me "essentials", such as Jaffa Cakes, that I can't get here in the States. In return she's asked for some good American candy. Crowd-pleasing restaurant in SF-- with multiple axes of diet issues.

One of us can't eat gluten or nightshades (peppers, tomatoes.) One of us is a vegetarian and doesn't eat seafood, and one will eat meat but not seafood. None of us care about cocktails or wine lists. What are some reasonably-priced (aim for under $40/person, will consider more), no-reservations, sit-down, casual/smart casual restaurants that we all might enjoy? Bonus points for a menu also excluding peanuts/peanut oil, extra super bonus points for Richmond/Sunset area.

What are some edible pest species?

I'm a (nominal) vegetarian for environmental reasons. But I do like the taste of meat. Somewhat of a practical compromise is that I allow myself to eat pest species, or animals that are culled then sold for good reasons. So I wouldn't mind eating some Kangaroo because they are being culled anyway, and they have a small environmental footprint. But in general, I'm not sure what is pest/culled for environmental reasons. My Google-fu has failed me here. What are some sources of meat/poultry/seafood that are suitable for a environmentally conscious diet? I'm not averse to eating things shipped from different parts of the world.

I have finally made seitan from scratch (rather than just buying Field Roast), using one of the baked seitan methods. It was GREAT and astoundingly easy! Sauces/seasonings for rice and beans?

My lunchtime staple is a bowl of black/kidney/pinto beans or lentils and brown/white rice, couscous, or quinoa with some type of vegetable mixed in. However, I get bored with the same sauces and seasonings (usually barbecue sauce, peanut sauce, salsa, or just plain with some onion and garlic) and am looking for new ideas. Must be vegetarian (dairy and eggs okay) and bonus points for *cheap* store bought sauces/dressings or homemade from ingredients I might already have in the pantry. I'm not a picky eater and am not concerned with fat/calories.

Passover challenge....

Passover meal all planned for my family, I am making brisket, matzoh ball soup and gefilte fish. Only problem is I want to include two dear friends who are vegetarian and one of them is stictly no dairy! Veg Friendly in Mountain View?

Mountain View (CA) has tons of restaurants, that to my untrained eye, are confusingly similar. I want to explore some of the rarer cuisines here, but most seem pretty veg un-friendly. Where here actually has good veg-friendly food? As an anti-example: the Shabu Shabu place offers veggies & veggie broth, but it's not terribly compelling. I want places that actually seem to like vegetarian cooking.
