I've started eating vegetarian, but I've really been missing meat. Recently I ate mock duck at a chinese resturant and it was delicious. I looked up it's ingredients and found out it is made of wheat gluten. I looked up how to make wheat gluten at home and came across this article. I tried using this to make wheat gluten, but the end result looks unappitizing. Without being too crude, it looks like excriment. I attempted a couple of times to shape the gluten to be more like that of a strip of chicken or similar meat, but the shape would't hold and no matter how I shaped it the gluten ended up lumpy and slightly tubular. I assume there must be a way to form wheat gluten I make into a more appealing shape. How do I go about doing this?
I am thinking of scaling back my factory farm meat intake and eating only the happy cows who are given hugs and sunshine every day. Complicating factor is I like a LOT of protein to support my lifting, and I'd never be able to afford as much $7+/lbs meat as I need to support that intake. I would like to hear the experiences of weight-lifting semi-omnivores on how they made this work for them. One of us can't eat gluten or nightshades (peppers, tomatoes.) One of us is a vegetarian and doesn't eat seafood, and one will eat meat but not seafood. None of us care about cocktails or wine lists. What are some reasonably-priced (aim for under $40/person, will consider more), no-reservations, sit-down, casual/smart casual restaurants that we all might enjoy? I'm a (nominal) vegetarian for environmental reasons. But I do like the taste of meat. Somewhat of a practical compromise is that I allow myself to eat pest species, or animals that are culled then sold for good reasons. So I wouldn't mind eating some Kangaroo because they are being culled anyway, and they have a small environmental footprint. But in general, I'm not sure what is pest/culled for environmental reasons. My Google-fu has failed me here. Passover meal all planned for my family, I am making brisket, matzoh ball soup and gefilte fish. Only problem is I want to include two dear friends who are vegetarian and one of them is stictly no dairy! Since I will be so busy cooking everything else, I want to find a FAST EASY entree recipe I can make for them-- no meat, dairy or flour--would love a make ahead casserole like matzoh lasagna, but everything good seems to have cheese! Mountain View (CA) has tons of restaurants, that to my untrained eye, are confusingly similar. I want to explore some of the rarer cuisines here, but most seem pretty veg un-friendly. Where here actually has good veg-friendly food? As an anti-example: the Shabu Shabu place offers veggies & veggie broth, but it's not terribly compelling. I want places that actually seem to like vegetarian cooking.
