Dreaming of Ottolenghi and Amada; stuck on frozen gyoza

I love cooking, but it's been a while since I've cooked on a regular basis (besides throwing together ingredients for salads and pastas) and even longer since I put together a proper meal with courses. I'm a pretty decent cook (and I have a list of favorite blogs, like Smitten Kitchen and 101 Cookbooks) but nothing's clicking, and I want recipes that are complicated and fun and delicious for a change of pace! Vegetarian seeking meat.

How do I cook the best turkey (and) and fixings meal for just myself (for a whole weekend)? I'm basically going to put on some Abba, and eat like crazy this weekend. So tell me how I can make the best Thanksgiving turkey and sides! Oh, this is anonymous because I am a vegetarian for moral reasons. Also, I prefer to limit it to just one type of animal, so no bacon wrapped shrimp. Probably no bacon wrapped shrimp. Recipes of good sides preferably not using just turkey.

Precious Bodily Fluids

Call me a cheater vegetarian. I love vegetables and grains, and I love the juice and rendered fat from meat. The meat flesh, eh, I can live without. Most of the meat flesh I cook I feed to my cats and crows. Got recipes? Got tips for extraction of meat flavors knowing that the meat may be discarded?

What is your favorite recipe for making seitan (from scratch)?

I have finally made seitan from scratch (rather than just buying Field Roast), using one of the baked seitan methods. It was GREAT and astoundingly easy! I am now contemplating the many, many flavor profile possibilities that seitan has to offer. Do you have a special spice mix, marinade or preparation method? I'm all ears! (Er, eyes, I guess, since this is a text-based medium.)

Vegetarian ISO romantic meaty meal

Carnivores of Mefi, please help this long-time vegetarian make a smashing dinner for her beloved's birthday! I did see this askme, but I would not consider myself an experienced cook and I really only need one knockout meal (though I will check those resources out!). Passover challenge....

Passover meal all planned for my family, I am making brisket, matzoh ball soup and gefilte fish. Only problem is I want to include two dear friends who are vegetarian and one of them is stictly no dairy! Since I will be so busy cooking everything else, I want to find a FAST EASY entree recipe I can make for them-- no meat, dairy or flour--would love a make ahead casserole like matzoh lasagna, but everything good seems to have cheese! I'm planning a haggis-centric party and will make semi-traditional haggis from this recipe. I also need to make a vegetarian version, so what would be a tasty veggie substitute for the meat (preferably using the same recipe)? I want to make delicious collard greens, but I want them to be healthy and vegetarian (so, no pork fat). I've tried a couple recipes I found online, but the results have been uninspiring (and the greens didn't strike me as nearly tender enough, even after an hour of boiling). Any advice? Any recipes?
