My mom is coming down from Boston to NYC for Thanksgiving. Her current plan is to cook the turkey, wrap it in aluminum foil, put it in a polystyrene cooler and then drive it down to NYC on Thursday. This is setting off my warning bells about food safety. [more inside]

What's the best place to buy a heritage turkey in Los Angeles?

Planning ahead for Thanksgiving dinner in a new city. On Long Island my parents used to go to a local turkey farm where you could choose your bird and they'd slaughter it fresh for you. I'd love something similar in the Los Angeles area; failing that, I'm looking for the best place where I can reserve a fresh, heritage bird -- happy to pay extra for it.

Who were these men in white robes and what exactly where they wearing?

A few weeks ago I was transiting through the airport in Istanbul, Turkey, and saw several men wearing odd robes. These were more like long towels than robes. The material seemed like white terry cloth bath towels, but could have been wool or another thicker material. They appeared to have one wrapped around their waists and another draped over one shoulder, although it could have been one long section. Each section would have been roughly 3' x 10' (1mx3m), or 3' x 20' if all in one. Now I am wondering, who were these men, what were they wearing and why were they dressed like that? [more inside]

Thanksgiving idiocy and ovenproof bags

We purchased a precooked turkey for Thanksgiving from Zabar's. We are getting ready to heat it up. The turkey is wrapped tightly in an open weave netting type bag which is tied shut. It is then has a clear plastic bag over it. The instructions say: Do not remove from oven proof bag. We are several idiots in disagreement about whether the plastic bag is the oven proof bag. Is there someone here (preferable who has ordered from Zabar's) who can clarify?

Kosher substitute for salt pork? We want to make an America's Test Kichen recipe for Thanksgiving turkey. It calls for salt pork to be laid along the back of the turkey during the first part of the roasting process (with the breast-side down), like so. ATK says this is called "barding" the turkey, which they say makes the bird "self-basting." [more inside]
