I'm cooking a mini-Thanksgiving for six people tomorrow, occasioned by my birthday (yesterday) and realizing that I had a turkey in the freezer from last year. Turkey is now in the fridge, thawed. But I haven't cooked a turkey or mashed potatoes in a few years, and I haven't cooked for more than 4 people in a while either, so I'm kind of freaking out. Help me plan, and suggest mashed potato and turkey recipes! [more inside]
Help! Back in the early months of this year I concluded that I was going to need to be somewhere outside of the U.S. as we headed into the last few weeks of the election. I had an airline voucher that needed to be used and I'd wanted to visit Turkey ever since taking a class in the history of the eastern Mediterranean region in university, and so I booked myself tickets to Istanbul with two weeks to spend between my arrival and departure (the last week of October and the first week of November.) I saw bits and pieces of this movie on a bus on a route through Denizli, Turkey, in August 2011. I don’t speak Turkish. I only have a few details. [more inside]
It was either in French (most likely) or German (may have had English subtitles). It was about a poor kid having grown up to be a rich man, and the story was being told via flashbacks. The detail I remember is some scenes about him being invited to a rich kid's house for a dinner. He took homemade baklava as a gift, which was looked down upon. His family may have been Turkish immigrants to this European city. [more inside]
My boyfriend are I were going to vacation in Istanbul in May. The recent terrorist attacks have given us second thoughts. We're looking for ideas of where to tour in alternate areas in Turkey. [more inside]
My wife and I would like to rent a simple furnished apartment or small house somewhere along the Mediterranean this summer, for about a month. We just want a place where we can do some writing and go swimming every day. The catch is that we don't have much more than 500€ or so to pay for rent. Seeking recommendations for countries, specific islands, towns or villages, or website recommendations! [more inside]
We're planning to take the night train from Sofia, Bulgaria to Istanbul, Turkey on the night of the 30th. We will be arriving in Istanbul at 8am on the 31st. We will have all day on the 31st in the city, and will return to Sofia on January 1st. We're looking for some recommendations. [more inside]
My partner and I have a one-week trip booked to Istanbul over the new year. We've been receiving a lot of flak about going from both sides of our family to the point where we are very seriously considering cancelling our trip. Our parents are worried about acts of terrorism such as bombings and shootings (things we feel could happen anywhere), as well as extremely unlikely scenarios like being kidnapped by ISIS. My partner's mother has expressly asked us not to go. [more inside]
Turkey defrosted for Thanksgiving. Sat in the fridge until yesterday, when it was re-frozen. If it safe to cook and eat? [more inside]
I am dabbling with the idea of using rendered duck fat on my turkey... [more inside]
I need to cook a Field Roast Hazelnut Cranberry Roast En Croute, a whole turkey breast and a couple turkey legs in the same oven, to come out at the same time. They need different temperatures. How do I make it work? [more inside]
So I screwed up. We're having early Thanksgiving this weekend. My wife picked up a local turkey, frozen, stored it in a refrigerator, and gave it to me to take home and do either a sink thaw or put it in our fridge. "Don't leave it in the car," she said. Guess what? [more inside]
Roasting a turkey breast to serve to my child's class and their families for a potluck lunch next week. I won't have time to roast it that morning, so I have to roast it the day before, refrigerate it overnight, and then bring it hot. What's the best way to do that? [more inside]
I need some Thanksgiving menu guidance. I feel my current menu is missing some crunch/freshness/tang. [more inside]
Two adults looking for a somewhat-urban, deliciously-flavoured, culturally-delightful, reasonably-priced weekend getaway from Istanbul on the first weekend of April (31 Mar-3 Apr), ideally no more than a few hours' journey away. Where should we go? [more inside]
I'll be spending 2 full days in Istanbul at the end of this month. It's my 5th time in this city; I think I've done all the touristy, central Istanbul things over the past three years. So what have I missed? What's worth a visit out in the suburbs? What about a day trip somewhere by train/coach? [more inside]
Dear hivemind, sorry for the highly specific question but how can I make the absolute most of an upcoming important 12 hours (midnight until lunchtime) in Istanbul? [more inside]
A few weeks ago, may be a couple of months, I saw a trailer for a documentary on UK television that was mainly footage of a guy free diving / swimming in the sea. [more inside]
My sister-in-law is getting married in Ankara, Turkey in August. I plan to go, but need help with making travel arrangements or just general Ankara help. [more inside]
Asking for friends who are in Turkey for the next week. They have done lots of guidebook research and have accommodations sorted out, but are looking for personal recommendations for must-see/must-do activities as well as recommendations for outstanding food and drink (read: alcohol wherever possible). Does anyone know the etymology of the Turkish name Tanrıvermiş? In particular, is it etymologically Turkic, or does it have an Arabic or Persian root?
Planning a last minute trip in late March/early April - need ideas for places to go or itineraries. My criteria: 10-14 day trip in which I can visit a city and an interesting natural area nearby. Top contenders at the moment: Buenos Aires, Athens, Istanbul, Spain. Further details inside. [more inside]
I have a friend in Istanbul who is depressed. Do therapists do cognitive-behavioral therapy there? If so, can you recommend someone? Any other therapist recommendations would be appreciated as well, but CBT is preferred.
When vacationing in Turkey a few years ago, I came upon outdoor wooden terraces/decks for lounging and sipping tea, outfit with rugs or upholstery and lowish tables. They seemed to be very common in the area (seaside southwest of Antalya), both in restaurants/cafés and in private yards, and were perfect for lounging and chatting for hours. Is there a name for this kind of thing? Picture I found on a blog. [more inside]
For the second year running, my delicious, heritage breed, Thanksgiving turkey has produced drippings that are a lovely shade of deep lavender. I mean, we eat it anyway, and the wonderful gelatin-rich jiggly stock we make with its carcass...but it's weird. [more inside]
We have lots of family over and this year my dad won an electric roasting oven (like these) and two turkeys. Recipe needed! [more inside]
Okay, having a problem with dry brining my turkey. Help? [more inside]
My mom is coming down from Boston to NYC for Thanksgiving. Her current plan is to cook the turkey, wrap it in aluminum foil, put it in a polystyrene cooler and then drive it down to NYC on Thursday. This is setting off my warning bells about food safety. [more inside]
Trader Joe's near me is selling fresh turkeys for Thanksgiving, both regular and (hey!) pre-brined at a good price. But no reservations and when they're gone, they're gone. Is it too early to buy a fresh turkey? Any reason not to get the pre-brined one? (same price, $1.99 a pound). Are there any advantages to thawing a frozen turkey? Would I get a better bird going to the old school meat shop (Gartner's in Portland)? Thanks!
For Thanksgiving this year, I decided that I will spatchcock/butterfly the turkey. Problem? I've never cooked a turkey before, and I need some help thinking through specific logistics of size and scissors. Detailed questions inside! [more inside]
Planning ahead for Thanksgiving dinner in a new city. On Long Island my parents used to go to a local turkey farm where you could choose your bird and they'd slaughter it fresh for you. I'd love something similar in the Los Angeles area; failing that, I'm looking for the best place where I can reserve a fresh, heritage bird -- happy to pay extra for it.
We are planning a long-awaited big summer vacation for July/August 2015. For many years, I've kept Croatia as a possibility for a trip like this, as it seems like it has a bit of everything we like - interesting cities, access to the outdoors and it seems to be a fairly 'easy' trip to enjoy without a huge amount of planning. For various reasons, I'm wondering if you could suggest other options. I've included a list of our desired trip components and would love specific suggestions! [more inside]
It turns out that the least bad of pretty terrible options for getting from Capetown to Ouagadougou on the day I want is via a 12 hour layover in Istanbul. Help me make the best use of my time! [more inside]
So. We are Americans planning to spend a week in Turkey in two weeks. Should we reconsider? [more inside]
Actually, we will be living in Zekeriyakoy, north of the city, but I am guessing a lot of my questions could be answered by Istanbul residents, past and present. [more inside]
Someone I work with is Turkish and in Turkey for the summer. He asked me to let him know if I would like something from Turkey. I do! But do I take him up on it? [more inside]
Websites to purchase and have wedding gift delivered to Istanbul?... And what should I get her? [more inside]
I've been accepted to two summer programs in two great cities! I am indecisive and have only a few more days to decide which travel grant to accept. [more inside]
I am planning on going to Turkey at the end of November for just shy of two weeks and am looking for a couple of pieces of advice: Is a side trip to Cairo alone for two days a terrible decision? And are there lodgings in Istanbul where it is easy to meet other travelers that don't involve giant dorms and drunken twenty somethings? [more inside]
A few weeks ago I was transiting through the airport in Istanbul, Turkey, and saw several men wearing odd robes. These were more like long towels than robes. The material seemed like white terry cloth bath towels, but could have been wool or another thicker material. They appeared to have one wrapped around their waists and another draped over one shoulder, although it could have been one long section. Each section would have been roughly 3' x 10' (1mx3m), or 3' x 20' if all in one. Now I am wondering, who were these men, what were they wearing and why were they dressed like that? [more inside]
My best friend and I are considering a trip to the Datça Peninsula (coastal western Turkey) in mid-April. We are looking for a safe, warm, relaxing beach trip on a budget. Is Datça where we want to be? [more inside]
I'm visiting Istanbul in May, we were originally going to stay near Taksim square, but I'm wondering if we should re-think because of the protests. Has anyone been there recently, or any locals able to make some recommendations?
I was inspired by growabrain's Jacques Pépin a few days back, and spent a couple days making a turkey galantine for a party. The results were perfectly fine, but for the amount of time and effort I put in I was hoping for something closer to amazing. [more inside]
I'll be traveling to Turkey in late April this year, and I plan to spend 4 nights (maybe 5?) on the Turquoise coast. I have the rest of the trip figured planned well enough, but the coast is a big question mark. [more inside]
I have a 5.13 kg (11.322 lbs) turkey I am cooking tomorrow IN A TURKEY BAG. I would like advice on cooking times from people who cook their turkey IN A BAG. According to this recipe, the total cooking time is 2 hours, and that is freaking my shit out. [more inside]
I accidentally bought a turkey that has been "deep basted with butter." Can I still brine it? [more inside]
I was wondering if anyone knew of some place in Chicago that was still offering Thanksgiving pick-up that's somewhere in the vicinity of the lake or the loop. Everything I'm finding is way out west which isn't going to work for me, or sold out. Alternatively, given that it's just the two of us, is it better to just go to a restaurant? If so, any recommendations?
I'll be traveling to Hong Kong/China this February, with a one-day (19 hour) layover in Istanbul. What's the best use of my time there? [more inside]
I think I figured out a way to simplify my family's Thanksgiving meal. What didn't I think of? [more inside]
My aunt, uncles, cousins, grandma, and everyone else I know is coming to Thanksgiving this year, and they all love good food and my aunt and grandma may very well be the best cooks I've ever met. I am smoking a turkey on the Big Green Egg and I want it to knock their socks off. I've googled but what I've found doesn't give me any indication that the turkey is going to turn out GREAT. I need a great, great recipe. Anybody have one? I'd be forever indebted to you. Bonus question: anybody have an equally delicious bread pudding recipe?
