help a moderately experienced business traveller pack for a long trip and keep her Zen

I travel regularly for work -- at least one week out a month during down time and three weeks out during peak time. But, my schedule is usually domestic, and always gets me home after 5 - 6 days, 10 at most... till now. I'm departing Wednesday on a four-week trip: first leg = two-day stops in all four US time zones, second leg = two weeks in one European city, with zero time home. I'm traveling cross-country from SF to NH via AZ. Any food/photography related stops other than the obvious?

I'm moving! I'll be driving from San Francisco (just north from there really) to New Hampshire in a month or so. I plan to document the trip w/a Nikon D40 camera and and cheaper, soon to be bought camcorder. It'll probably be a Samsung Sports Cam, although it's not central to the question. I want a great route which I have half checked out, I guess. I want a great culinary as well as a scenic sample of the US. I'm looking for the rural food/scenic stops just outside of major (or not so major) interstates. If the stops are on the interstate, awesome! If not, please tell me why the stops deserve an off interstate jaunt (50-100 miles or so off of the interstate.) Please feel free to message me if you'd rather. Is it really that risky to take a GPS unit to Russia?

This travel advisory from the State Department website, dated 1998, states that the use of GPS units is highly regulated in Russia and that it is risky to bring one unless it is fully documented. Now, GPS units are a lot more common today than they were in 1998. Do I really have to worry about this? I am planning a multi-country trip and I could mail myself the GPS ahead of time to my post-Russia destination if I had to. I am an amateur photographer and I use the unit to tag the location of photos I have taken.
