A university is developing an initiative in which pairs of professors, across disciplines, will meet up with small groups of first year students during their second semester to discuss themes of interest and promote intellectual engagement. These informal meetings will occur at least four times over a couple of months and can take place anywhere: in seminar rooms, in a dorm lounge, at a restaurant, at a professor's home, at an art gallery. I'm a health-conscious college student who would like to spend less money eating out. The problem is I don't have much time, or resources (like a full scale kitchen), to prepare "real" meals.
Ideally, I would like something that I could cook in bulk and then take with me to microwave at work for lunch, or at home for dinner. But I'll need some variety.
Keep in mind, I prefer vegetarian dishes and maybe an occasional fish meal. Absolutely no red meat. :) Low in saturated fat, and easy on the budget.
Any ideas are welcome.

Law school + dog: I'm starting law school next fall, and I am currently looking at my housing options. I'm specifically looking for places that are pet friendly, but I need to know whether it is really possible for me to have a dog as a first year law student. Anyone out there been to law school recently? How much extra time will I have? (Assume that the neighborhood/apartment size is not an issue, and I've had dogs before so I know how to care for them.)
