Food safety question: Mussels with green, mealy innards?

Why call it "Seafood Restaurant?"

Why do some Chinese restaurants have names ending in "Seafood Restaurant" when most of their menu is not seafood? I've found this most often in North American Chinatown areas with menus and signage in Chinese characters. Is "seafood restaurant" an incomplete translation of something Chinese or describes some particular culinary tradition, the same way a "steakhouse" describes a kind of restaurant where I have a good idea of what kind of non-steak foods to expect? Anywhere I can read up on what that tradition is? Or are they simply trying to advertise that they are particularly good at seafood?

Refreezing seafood; why is it bad?

I'm trying to find technical information on why refreezing seafood is bad. I've found a pretty good one explaining the problem behind refreezing food in general at The Straight Dope, but I'm looking to dive deeper into it, specifically what effect it has on things like lipids, what the chemical changes are, what nutrients are lost or start to break down, etc . . . along with the spoilage risk which sounds like its much worse with shellfish even if kept at refrigerated temperatures. (At least that's what the internet tells me) [more inside]

Have rods, tackle & permit, will travel near Seattle.

I just acquired a couple of light-duty (i.e. inappropriate for river salmon) fishing rods, I've received a primer in selecting tackle and setting everything up, I know my knots, I've got my permits and a Discover Pass, and my cooler is ready for some fresh catch. Where, within a 40 minutes' drive of Seattle, can I go catch delicious fish that I can cook and eat? Any recommendations for location-specific books or other resources geared toward an absolute beginner who is more enthusiastic about the food than the sport? [more inside]

Overcoming seafood allergies?

Since I was about 12 I've been allergic to seafood, after previously being fine with it. It would cause me to be really, really sick ... as in the worst case of food poisoning one could imagine, but no anaphylactic shock. Looking for personal recommendations for seafood restaurants in St. Petersburg, FL area.

My SO and I will be in St. Petersburg, FL area for 2 and half days and I've been put in charge of lining up where we should eat. His requirements are to pick a place with ice cold beer and conch listed on the menu. My requirement is to find a place where the locals go and tend to be less touristy. Suggestions for places you've actually dined that meet both of our requirements? Oh, we will have a car, are flying in and out of Tampa and don't mind travelling a bit farther out for a great place. Thanks!
