What are the tastiest ways to eat canned sardines?

Help me actually enjoy eating my canned sardines! I've started eating sardines packed in spring water for health reasons (omega-3 oils, relative lack of toxic contaminants, excellent protein source, high levels of calcium, etc). I also find they have an appetite suppressant effect which I like.

But.

While I love Portuguese smoked sardine fillets packed in olive oil, I find the whole sardines (Brunswick) with the bones and internal stuff relatively gross - although much, much healthier. My current strategies include burying them in dijon mustard and hiding them in large green salads ... I'm trying to cut carbs so I'm not sticking them between slices of bread for sandwiches.

So, canned sardine eaters... how do you eat yours and make them tasty?

I hope to take my family to upstate NY for thanksgiving via the 48 Lake Shore Limited Amtrak Train. There will be four of us going. My wife, myself, and our two children (both over 2, under 5).
With money being a bit tight, I would like to purchase 2 normal seats, and upgrade the other two seats to a Viewliner Roomette (suggested occupancy of 2, but with my kids being small, and having traveled in one before I know we could all fit). Will there be any issues just leaving the two seats unused, and all of us piling into the room? Will they ask two of us to go back to our seats?
I can't afford two of the viewliners, both ways of the trip, and cannot afford to upgrade to the full room. But I know I can budget an extra 400 to get the viewliner for both ways for one set of us. We both really liked the privacy of the roomettes, and it keeps our kids in one area, so we can sleep and not have to worry about one getting up and unbuckling and running around.

Where can I get a new can of sardines which opens with a key?

Where can I get a new can of sardines which opens with a key? When I was growing up, my father would always have cans of sardines which he would open with an included key (for an example/explanation of this, please scroll down to section 2.5 on this page). I'd like to get him one (which he can eat, hence the "new" criterion) for Father's Day , but have so far been unsuccessful in finding one locally (I'd like to buy it in person to verify that it uses the key, but if you have recent experience with a particular brand I'm fine with online purchase). If it's available for purchase in the greater Seattle area, so much the better (I've already checked DeLaurenti's and The Spanish Table).

cheap omega-3 from fish filter

I've decided that I'd like to get more omega-3 fatty acids from fish in my diet, and I'm wondering what the most cost effective way to get it is. (The omega-3 from plant sources such as walnuts and flax appears to be different than the omega-3 from fish.) Judging from a quick google search, canned sardines and canned wild salmon are good sources of omega-3, and judging by a trip to my grocery store, canned pink salmon and sardines seem to be the best choices on a value basis. However, there seem to be quite a few links on the web saying that the double cooking of canned tuna used by large companies is bad, because of increased mercury and/or decreased omega-3.

Are canned sardines and canned wild salmon a good source of omega-3 (and in the case of salmon, a relatively low source of mercury)? If yes, how is the canning of sardines and salmon better than the canning of tuna?
