I have never owned a car roof rack. I would like to own one to haul extra stuff. What are the best uses for a car roof rack? What configurations and additional roof rack accessories will I need to best utilize it?

In one short month Mr. Bruno and I are traveling to California (from Boston) for a long overdue vacation. I am hoping you can help me make it even more awesome (it’s been years since we got to travel without a family visit or a wedding to attend, so it’s already pretty awesome). I have seen
this thread, and used it to plan parts of this trip, and would like some specific feed back as well as general recommendations, if you’ve got ‘em. Accomodations and number of nights are set, but activities are not. Things we like: eating, walking/not-too-long hikes (especially in parks/gardens), people watching, unusual museums/unique visitor attractions, farmer’s markets, bookstores, unique food shops. Most of our vacations are just walking around, poking into places that look interesting, and eating.

My dad and I are thinking of taking my 85yr old grandmother on a road trip. She was diagnosed with small cell lung cancer last Thursday and decided on Friday that she doesn't want to go through treatment. She does, however, want to see her sister, sister's kids and grandkids one last time. However, they live 1,300KM away in a mid-sized Mid-West city in the States while we're in Toronto. We'd like to make this visit happen for grandma, recognize all the risks inherent in trying to do so, and would like to hear the stories/experiences of anyone who has done anything similar. I moved to US and Florida (Miami) recently and I am leaving this weekend (Friday after work, so 7PM-ish) for a small roadtrip. We are planning to sleep somewhere along the road (probably on a motel), staying saturday night somewhere nice, and returning on sunday.
I will be traveling with my wife and we love getting to know different places, small towns, good food and some shopping too.
We'd love to have an interesting road to drive, but I guess my options are either I-75 or I-95, right?
So here's my question: between somewhere in GA (maybe even getting to Atlanta?) and somewhere in NC (any advice is welcome), and something else, what would you pick? Why?

What are some must-see scenic drives and attractions to be found on a one-way roadtrip West from Cincinnati, OH to Seattle, WA. Mid-40s opposite-sex couple who love photography, don't like hiking very much but appreciate a good hot spring, and are what you would call "foodies".
