Due to some miscommunication, I am now the proud owner of three huge boxes of baby arugula. My typical tactic of making simple onion-and-Parmesan salads is feeble before this gross excess. I am looking for recipes that require great heaping handfuls of arugula. I'm a decent cook and I'll eat anything, but I don't particularly enjoy non-smoked, non-fried seafood.
