He has nutritional deficiencies that have disrupted his sleep (and therefore his daytime mood) due to his unwillingness to eat anything but cheerios, crackers, and fruit. I have a bunch of peanut butter that I need to use up, but I'm running out of ideas. I would particularly appreciate recipe ideas that I can use in meals, though all I can ever really think of is perhaps Thai-style chicken/noodles, or PB&J sandwiches, or fruit with peanut butter dip. I know there's also stuff like peanut butter cookies and other baking goodies, but I'm trying to avoid sugar-bombing my diet too badly. Please help me with ideas!
I recently came across this awesomeness of a Daal recipe. It blew me away, not only with its amazing flavor, but the fact that you actually don't have to cook. I mean you chop one onion, dump all the ingredients in and less than 30 minutes later, you have an amazing meal. Help my sanity - share your grainless vegetarian recipes! I can't tolerate any grains, rice, oat, barley, wheat, corn, quinoa, etc. This means that traditional "gluten free" replacements are out of the question. I'm starting to hit the wall in terms of being able to deal with it, and I need some variety in my diet! I'm a health-conscious college student who would like to spend less money eating out. The problem is I don't have much time, or resources (like a full scale kitchen), to prepare "real" meals. Ideally, I would like something that I could cook in bulk and then take with me to microwave at work for lunch, or at home for dinner. But I'll need some variety. Keep in mind, I prefer vegetarian dishes and maybe an occasional fish meal. Absolutely no red meat. :) Low in saturated fat, and easy on the budget. Any ideas are welcome.
