Help us not starve!

Short version: The family's primary cook and caregiver is in the hospital for an unknown length of time. It'll be two weeks minimum, could be a lot longer. Then she'll have a long recovery period at home. Her husband and I both theoretically can cook, though he's not very good, and I have medical complications. Between us we have to feed each other and a couple teenagers. Meal planning's fallen to me, but most of the shopping and cooking is on him. We need to survive until his wife's out of the hospital. Please help me feed my friends

I need a collection of ideas for easily prepared, light meals to serve when friends drop by. Think lunch or small plates to go with a glass of wine. Often friends will drop by within a couple hours notice. They like to eat and I like to be a good host. No firm dietary restrictions for most but these friends are interested in healthy eating, fewer carbs. One vegetarian in the mix. The entire meal does not have to be vegetarian. Thank you!

Upgrade my bean bowl and noodle soup! (No sugar and salt edition)

I've been trying a no sugar/complex carbohydrates diet by dumping vegetables and canned salmon together with beans in a bowl, or dumping vegetables and canned salmon together with shirataki noodles in a bowl and then pouring in hot water. This gets old, fast. What are some ways to simply upgrade the taste of my meals, without added sugar, simple carbohydrates, or too much added salt? [more inside]

Toddler hunger strike

I know that picky toddlers are so common they are a cliché, but I really need help with mine. How to use up peanut butter?

I have a bunch of peanut butter that I need to use up, but I'm running out of ideas. I would particularly appreciate recipe ideas that I can use in meals, though all I can ever really think of is perhaps Thai-style chicken/noodles, or PB&J sandwiches, or fruit with peanut butter dip. I know there's also stuff like peanut butter cookies and other baking goodies, but I'm trying to avoid sugar-bombing my diet too badly. Please help me with ideas!

Delicious "no-cook" dishes in under 30 min?

I recently came across this awesomeness of a Daal recipe. It blew me away, not only with its amazing flavor, but the fact that you actually don't have to cook. I mean you chop one onion, dump all the ingredients in and less than 30 minutes later, you have an amazing meal. Which immediately made me wonder, are there any other awesomely tasty recipes out there which I could add to my repertoire of fast and easy?

Share Your Grainless Recipes!

Help my sanity - share your grainless vegetarian recipes! I can't tolerate any grains, rice, oat, barley, wheat, corn, quinoa, etc. This means that traditional "gluten free" replacements are out of the question. I'm starting to hit the wall in terms of being able to deal with it, and I need some variety in my diet! What's for dinner?

PlanMyMealFilter: I've had a fairly miserable couple of days and feel like cooking something soothing/comforting/delicious tonight, but am tired of my usual fallback, mac-n-cheese. What are your recipes for your favorite comfort foods? Nothing tooooo complex (it's getting late, after all) but I wouldn't mind concentrating for a while on something that isn't super-depressing. Only dietary restriction is no soy or cumin.

Fast, healthy, on-the-go meal ideas and recipes?

I'm a health-conscious college student who would like to spend less money eating out. The problem is I don't have much time, or resources (like a full scale kitchen), to prepare "real" meals. Ideally, I would like something that I could cook in bulk and then take with me to microwave at work for lunch, or at home for dinner. But I'll need some variety. Keep in mind, I prefer vegetarian dishes and maybe an occasional fish meal. Absolutely no red meat. :) Low in saturated fat, and easy on the budget. Any ideas are welcome.
