Help me make the most out of my $100 enameled cast iron pot!

I just put down $100 on a new pot that's 4-quart capacity, and oval-shaped. It seems that before I got it, every single recipe called for an enameled cast iron pot for a braised this and a braised that. (Sometimes even bread!) So, please share with me your absolute favorite recipes that have to be made in a cast iron pot. I'm already eyeing a lamb shank recipe with pomegranate molasses.

Help us not starve!

Short version: The family's primary cook and caregiver is in the hospital for an unknown length of time. It'll be two weeks minimum, could be a lot longer. Then she'll have a long recovery period at home. Her husband and I both theoretically can cook, though he's not very good, and I have medical complications. Between us we have to feed each other and a couple teenagers. Meal planning's fallen to me, but most of the shopping and cooking is on him. We need to survive until his wife's out of the hospital. Often friends will drop by within a couple hours notice. They like to eat and I like to be a good host. Upgrade my bean bowl and noodle soup! (No sugar and salt edition)

I've been trying a no sugar/complex carbohydrates diet by dumping vegetables and canned salmon together with beans in a bowl, or dumping vegetables and canned salmon together with shirataki noodles in a bowl and then pouring in hot water. Low-effort, bulk vegetarian recipes?

I'm looking for vegetarian recipes, without beans, which scale well relative to the level of effort. By which I mean: when you make potato salad, you can double it, but you're going to spend 2x the time peeling potatoes. That's bad. Chili (unfortunately, has beans) scales well: you don't need to individually wash every single bean, you just chuck in 2x the number of beans. Any recommendations for recipes? [more inside]

Ideas for no-cook meals besides sandwiches?

I'm on a lazy/convenient no-cooking kick and have been eating just sandwiches with deli meats and sliced veggies, and fruit. Assume you could not use the stove/oven nor have any other kitchen equipment (no blenders, microwave, etc, but just a knife, can opener). What are some meal ideas besides sandwiches? I'm not looking for snack ideas like nuts, crackers, etc. but actual meals. I am a meat-eater if that makes a difference and prefer to avoid a whole lot of canned foods because of BPA. (also a tofu eater)

Can I still make good Mexican food without nightshades?

I've been directed by my naturopath to avoid nightshades (tomatoes, peppers, chilies, and others) as a way to improve my eczema. It has been helping so far, but I'm finding I really, really miss Mexican food. I'm talking about the standard stuff: salsa, tacos, fajitas, chilli, YUM. I now live two minutes away from a huge korean supermarket that has an amazing and cheap produce and seafood section. I have no idea what a lot of this stuff is, but I love Asian cooking, so what are some things I should buy, now that I have an opportunity? I will be working for the next two weeks outdoors and for long hours. I would like to try and eat actual, healthy meals or snacks, but it will be hard because I won't really have access to a microwave.
