Can I still make good Mexican food without nightshades?

I've been directed by my naturopath to avoid nightshades (tomatoes, peppers, chilies, and others) as a way to improve my eczema. It has been helping so far, but I'm finding I really, really miss Mexican food. I'm talking about the standard stuff: salsa, tacos, fajitas, chilli, YUM. Do you know of any good nightshade substitutes that could be used in these dishes? Or any alternative recipes for these items that do not contain the forbidden foods?

What should I buy from a korean supermarket?

I now live two minutes away from a huge korean supermarket that has an amazing and cheap produce and seafood section. I have no idea what a lot of this stuff is, but I love Asian cooking, so what are some things I should buy, now that I have an opportunity? I'm particularly interested in any recipes that are easy, inexpensive, and depend on 'ethnic' ingredients that you can't find in most grocery stores, or fresh seafood or unusual cuts of meat (pork belly, chicken feet, etc)

Meals that I can make ahead of time, freeze, defrost

I will be working for the next two weeks outdoors and for long hours. I would like to try and eat actual, healthy meals or snacks, but it will be hard because I won't really have access to a microwave. What are your best recipes with yogurt?

I bought 2 pounds (the smallest size I could find) of plain whole milk yogurt, not realizing that there was an almost-empty container in the fridge. So now I have all this yogurt with a best-by date of August 5. What are your favorite ways to use it? I would like to set up weekly meal planning/recipe/shopping list service. I follow a certain dietary plan -(NOT paleo )and think that that there i a gap in the market for a simple menu/shopping list which arrives in your inbox every week. The problem is that I have no idea how to go about setting it up.I am a very decent cook and have done this for myself for about a year,so I already have a whole set of recipes and tricks that are diet compliant. Interesting foods to pack in the calories?

I need 3000 to 3500 calories a day to maintain my current (healthy) weight. Currently, I eat like a normal person, plus a full-sized bag of chips. This keeps my weight stable, but is obviously not ideal. Sometimes I have a fourth meal instead. I also eat a lot of peanuts. I love cooking and eating, but I'm kind of annoyed by this.
