What are the easiest one [baking] pan recipes?

Looking for recipes where I can essentially throw just about everything - meat, veggies and/or starch - onto a tin foiled baking pan, cover it with sauce/spices, roast my dinner with sides and all and call it a night. [more inside]

Transporting Christmas Dinner

I want to do a special day after Christmas dinner for myself and my boyfriend. The only thing is, I'll be in a car for 6-7 hours heading back from my parents' before I'll be back at my house. I want to make a fantastic kosher dinner. Recipes needed!

I'm having a date night at home on Saturday with my wife, which means I'm cookin' dinner and making dessert from scratch. Would like to knock her socks off with a fantastic, romantic meal. The catch: we keep kosher. We're not very strict, but don't mix milk and meat products in the same meal. And I know my way around a kitchen, but am not a professional chef.
