really cake-y cake. I have had a few really good cakes in the last few years that were less spongy and a bit drier than the ordinary kinds of cake out there. What is the secret to making cake with this texture? Every recipe I try ends up with the softer, spongier cake that we are all used to (and that the box brands aspire to). This cake-y cake seems more old-fashioned--seems a bit more like bread. Can anyone help? I am wondering if it is a recipe issue, or whether it has something to do with time cooking, or how you prepare the ingredients, or oil vs. butter vs. ??? Let me know the secret!

What are your best dips to go with raw or steamed vegetables? As part of bringing lunch to work everyday, I'd like that many of those lunches consist of raw or steamed vegetables with a simple sauce or dip. I'm very open-minded to ethnic flavors, spiciness, sweet and umami flavors... surprise me! My preferred vegetables are bell peppers, cucumber, and broccoli, but you are welcome to convince me of other optimal pairings.

Can I make paella with whole grains? I've found a paella recipe that I love, but I generally try not to eat white rice. So I'm wondering if I can make it with spelt or farro instead. I would just experiment with the recipe, but the ingredients are kind of expensive, and I don't want to end up throwing the whole thing out because the grains didn't cook up right. Anyone cooked this sort of thing or had it in a restaurant?

I need a great appetizer recipe for the annual contest at a holiday cocktail party. There will be serious amateur foodies in attendance. I'm terrible at design, so I'm not even going to try to win Best Presentation. What would you make if you were trying for Best Savory, Best Sweet, or Best Overall? A great drink recipe is a possibility, too--last year my homemade eggnog was runner up for Best Sweet (there was no "Best Boozy" category).
